摘要 概括了食物中的三种重要维生素 :即维生素A、叶酸和维生素E的生物吸收、生物利用、生物转化、生物效力和表达方式。并指出了不同表达方式各自的优缺点以及它们之间的转换关系。阐明了三种维生素的生物利用和表达方式对于分析方法、食物营养标签、食物成分数据库以及DRIs制定的重要意义 。 It showed that the bioavailability and the expression of vitamin A,folate and vitamin E are very important to the analysis methods, the nutrition labeling, the food composition database and the determination of DRIs. Therefore, the bioabsorption, the bioavailability, the bioconversion, the bioefficacy and the expression of three important vitamins in foods namely vitamin A,folate and vitamin E was reviewed and summarized in this paper.
