稻米矿质营养元素含量受种植环境的影响研究 被引量:10

摘要 选用3种种皮色的36个水稻推广品种和种质资源,分析比较了在不同环境(季节、地点)条件下,精米中Se、Cu、Fe、Zn、Ca和Mn 6种矿质元素含量的差异。结果表明,①精米中6种元素的平均含量依高低排序为Ca>Mn>Zn>Fe>Cu>Se,各元素含量的变异系数高低排序为Fe>Ca>Cu>Se>Zn>Mn。②筛选出多种元素含量高,且在3个不同环境下稳定的品种:Fare Bardhi富含Se、Cu、Fe、Zn元素且较稳定,崇阳糯含Cu、Fe、Zn、Mn矿质元素高且稳定,培两优288中Se、Cu、Mn含量高且稳定。③黑米Ca含量(平均75.832μg·g^(-1))极显著高于白米(63.876μg·g^(-1))和红米(59.224μg·g^(-1)),其余的各元素差异不显著。④Cu、Ca、Se 3种元素含量表现生态环境与稻米种皮颜色基因型间的互作,而Fe、Zn、Mn 3种元素在3个不同环境条件下,不同稻米种皮颜色精米中的含量均差异不显著。 Thirty-six popular rice varieties and rice germplasm with three kinds of colors for seed coat from different environment circumstance (i. e. season and place) were used to study the contents of Se, Cu, Fe, Zn, Ca and Mn mineral element in the polished rice and their variation trend and correlation. The results showed that:①Average contents of six elements in polished rice were Ca>Mn>Zn>Fe>Cu>Se. The C. V. % of six element contents were Fe>Ca>Cu>Se>Zn>Mn. ②Some varieties with both higher and steadier multi-mineral element contents were screened, such as Fare Bardhi, which contained higher and steadier contents of Se, Cu, Fe and Zn, Chongyangnuo possessed higher and steadier contents of Cu, Fe, Zn and Mn, Peiliangyou 288 has higher and steadier content of Se, Cu, Mn. ③The content of Ca in the black polished rice (75. 832 μg·g-1) was significantly higher than that in the white polished rice (63. 876 μg· g-1) and that in the red polished rice (59. 224 μg·g-1). There was no significant difference in the other element contents among three colors of seed coat. ④The contents of Cu, Ca. Se were affected by the interaction between ecology environments and rice genotypes. But as to the contents of Fe, Zn, Mn in the polished rice, there was no significant difference among three colors of seed coat when they were planted at three different environments respectively.
