比较猪油交酯油和某些植物油对大鼠血脂的影响 被引量:1

摘要 甘油三酯(TG)的脂肪酸组成和其主体化学结构形式对油脂的熔点、消化吸收率及其营养价值产生不同的影响,尤其是TG的β—位脂肪酸种类,在很大程度上影响着油脂的性质。因此,许多营养学家试用交酯法使TG分子中的脂肪酸分子进行交换,并随机分配在α—和β—位上,获得的交酯油经证明多具有降血脂和减轻心肌坏死的作用。本文比较了5种油:猪油交酯油(TRO)、猪油调合油(MIO)、大豆油(SB0)、菜籽油(RSO)和猪油(LD)配制的饲料对大鼠生长和血脂水平的影响。结果指出:(1)TRO和MIO、SBO组大鼠的生长正常,LD组的平均体重最大,RSO组的生长显著迟缓;(2)TRO和RSO饲料有明显降低血清总胆固醇(TC),升高高密度脂蛋白胆固醇(HDL—C)和HDL—C/TC比值的效果;(3)TRO和RSO组大鼠的肝重与肝胆固醇含量明显降低;(4)TRO、MIO和RSO组大鼠的心脏重量较高,此可能由于菜籽油中所含芥酸对大鼠心肌的特异作用。 用硝酸银薄层板技术分析见到TRO中的三饱和甘油酯已近消失,可能为TRO降低血脂的因素之一。 本实验结果表明交酯化反应可作为改良猪油质量的一个加工方法。
