摘要
综述了近年来高效液相色谱和液相色谱 质谱联用技术在食品工业上的应用。这些应用包括食品中糖类、蛋白质、维生素等营养物质的测定、食品添加剂定性定量测定以及食品中残留的农药、兽药等污染物的测定。
Applications of HPLC and LC-MS techniques for the determination of nutritious and xenobiotic substances in foods were reviewed. Specific examples discussed are proteins, sugars, vitamins, pesticides, herbicides, insecticides and antibiotics residues as nutritions or xenobiotic substances.
