紫薯色素的研究进展

Research and application of anthocyanins of purple-fleshed sweet potatoes

紫薯色素主要含花青素类色素,它具有抗氧化、抗突变、减轻肝机能障碍与心血管疾病等作用。综述近年来国内外对紫薯色素植物来源、分离纯化、化学组成、分子结构、稳定性、生物活性及其应用前景等方面的研究进展。

Purple-fleshed sweet potatoes are anthocyanin-rich foods.Anthocyanin pigments of purple-fleshed sweet potatoes show functions of antioxidation and antimutagenicity,they also can prevent carbon tetrachloride-induced acute liver damage in the rat and reduce the risk of coronary heart disease. Advances made in recent years home and abroad concerning researches on plant origin, isolation and purification, chemical constitution, molecular structure,stability, biological activity,as well as application forcasts etc.for anthocyanins of purple-fleshed sweet potatoes are summerized.
