摘要
紫甘薯花色甙在不同环境条件下的稳定性分析结果表明:该花色甙具有一般花色甙类色素的光谱特性,在pH值3 0以下的水溶液中呈现稳定红色,蔗糖和抗坏血酸都有使其增色的效应,金属离子Fe2+、Fe3+和Al3+对其无不良影响,其耐还原性强,尤其是耐热性和耐光性较好,是一种提取优质天然红色素的上好原料。
In this paper, the stability of anthocyanin from purple sweet potato was studied under different environmental conditions. Results showed that this kind of anthocyanin had spectral characteristics of the general anthocyan pigment. The color of anthocyanin solution was bright red at pH 3.0 and deepened under the condition of adding sugar and ascorbic acid. Fe^(2+), Fe^(3+) and Al^(3+)
