连云港市快餐业发展问题探讨

摘要 连云港市快餐业市场竞争格局复杂,经营的主体以个体、私营、民营企业为主,经营的方式主要有:流动摊点式、前店后厂作坊式、餐馆(饭店)兼营式、超市兼营式、快餐连锁店式等。存在的问题:一是标准化程度低,质量检测体系不健全;二是服务质量仍待提高,软环境建设仍需加强;三是卫生状况堪忧,监管力度急需加强;四是广告宣传乏力,品牌意识淡薄;五是人才缺乏,发展后劲不足。加速发展的思路:一要正确把握概念,明确发展目标;二要透析西式快餐发展,认真借鉴学习;三要加强政府扶持力度,快速推进其发展;四要以人为本,加快专门化人才的培养;五要依据实情,逐步实现机械化;六要重视连锁经营,勿盲目跟风;七要多方协作,共同促进其发展。 The competitive state of Lianyungang fast-food industry market is quite tanglesome because of its diversiform subjects and modes of business operation. The former involves self-employed laborers, private enterprises or nongovernmental businesses, and the latter includes mobile stalls, stores in front of workshops, hotels selling fast-food concurrently, supermarkets selling fast-food concurrently, fast-food chain stores and so on. As a result, such problems have emerged as ①low standardization degree and unsound quality detection system, ② service quality to be improved and soft conditions to be strengthened, ③ uneasy sanitation circumstances and the control strength to be enhanced, ④ weak advertising media and faint sense of brand name, and ⑤ lack of talents and low capacity for later development. To speed up the industry lies in ① grasping the concept correctly and pinpointing the development goal, ② analyzing western fast food development experience in detail and using it as reference, ③ strengthening governmental support and boosting its development quickly, ④ human first and speeding up training of specialized talents, ⑤ realizing mechanization step by step according to the fact, ⑥ paying emphasis on chain management but being not to follow it blindly and ⑦ multilateral cooperation and collaborative development.
