摘要
历史记载表明,大白菜是与小白菜有渊源关系的蔬菜品种。散叶大白菜(牛肚菘)可能在唐代已经出现,结球品种可能出现于宋初。地处江淮流域的古扬州地域是大白菜分化发源的重要地点。大白菜进入北方以后,随着贮藏技术的完善,加上当地的低温和长日照气候适于优良品种的进一步形成,明清时它在北方得到迅速的发展。
Historical records show the Peking cabbage to be originated from Pakchoi (Brassica chinensis). This paper deems that the original type of the Chinese cabbage might be bred in 659 during the Tang dynasty. After a period of about 300 years, its advanced type came into being in the early part of the Song dynasty, and the ancient Yangzhou region located in the Huaihe River valley had been a major area of its origin and evolution. Later on it was introduced into north China, and with the subsequent improvement and perfection of storing technology and the more suitable climate of low temperature and long sunshine for it there, many fine breeds of the Peking cabbage were turned out. During the Ming-Qing period, it was grown in north China on a rapidly enlarging scale.
