摘要
对膳食纤维的功能、合理食用膳食纤维、常见食物中膳食纤维的含量以及国内外膳食纤维食品研究的动向进行了探讨.研究资料表明,不同食物膳食纤维含量不同;膳食纤维对人体健康具有特殊的生理功能,尤其在防治冠心病、胆结石、糖尿病、癌症等方面显示出明显的疗效;每人每天最适合的膳食纤维摄入量为20~25g,其来源为粗粮糙米、蔬菜、水果、藻类食物等.同时根据国内外研究动态,提出了今后的研究方向.
The function of dietary fiber its reasonable, taking in, its content in common food, and its (research) trend in the world are discussed. The latest research shows that different food has different content of dietary fiber, it has some special physiological functions for health, especially for the prevention and cure of coronary heart disease, chololithiasis, diabetes, and cancer. It is proposed that the optimum (amount) of dietary fiber to be taken in is 20~25 g a day for everyone, its source being the coarse food grains, vegetables, fruits, algae and some new products coming into the market. Base on the development of investigation in this respect, the investigation direction at home is proposed.
