本文介绍了一种以酶葡萄糖为原料生产低聚龙胆糖的技术。该技术采用了一种新型酶 ,这种新型酶的最适pH为 5 .0 ,最适温度为 70℃ ,若要保持 10 0 %酶活性 ,温度应控制在 5 5℃以下。该酶的等电点为 5 .30 ,分子量约为 85 0 0 0左右。
Producing gentiooligosaccharide from glucose by a new enzyme was introduced in this article. The best pH for this new enzyme was 5.0, the best temperature was 70℃. If the enzymatic activity was kept at 100%, the temperature should be controlled below 55℃. The IP of the new enzyme was 5.30; its molecular weight was about 85000.
