摘要
本研究从内蒙古毛乌素沙漠牧区的牧民家庭采集了96份乳及乳制品样品,从乳样中分离到41株乳酸球菌并对其生物学特性进行了研究。经发酵试验发现有些菌株能产酸凝乳,发酵乳风味纯正,大部分菌株生长温度范围较广,适合做乳制品的发酵剂。
The Lactic acid cocuss was isolated from 96 samples of milk and milk products collected from the pastoral area in Maowusu desert. Its biological properties were also studied. 41 strains of the Lactic acid cocuss were isolated.They respectively blonged to 11 species .They had properties of producing acid, solidifying milk and producing good smell through fermentation test. The temperature rang for growth of lactic acid cocuss was wide and could be used as leaven in milk products.
