摘要
研究了大豆蛋白提取工艺,实验证明,豆粕的粉碎方式、萃取温度、草取时间和pH值等都会影响蛋白质的得率。豆粕在与水混合的状态下进行粉碎,提取温度不高于60℃;pH值在9.0时,不仅可以提高蛋白质的提取率,而且可以很好地保持蛋白质的性质。
Research about extraction technology of soybean protein is carried out for development of soybean protein/PAN fiber. The experiments show that crush, temperature, time, pH and so on have influence on the yield of protein, crushing mixers of meal and water and setting the extraction temperature as 60℃ and pH as 9.0 not only get high protein yield, but also keep the protein quality unchanged.
