摘要
用光谱法对橘皮色素的稳定性进行了研究 .结果表明 :橘黄色素水溶性好 ,对光、热的耐受性强 .当 pH为 2～ 8时 ,色素稳定性好 。
The stability of yellow tangerine peel grown in Zhejiang province was studied.The results show that it has good light and heat resistance,soluble in water . Its stability was good when the pH is within 2～8 .The yellow pigment was not reacted with some metal ions.
