摘要
以食用仙人掌和鲜牛奶为主要原料,配以双歧因子甜味剂和其他辅料,通过物料配比试验、护色剂试验、稳定剂试验,优选出最佳配方,按一定工艺流程并经发酵制成一种新型营养保健仙人掌酸奶.
A cactus healthcare yoghurt was developed with nutrition and healthcare function by using cactus and fresh milk as the main materials. Oligo-galactose were incorporated to obtain final product. With the material ratio experiment, the color-protecting experiment, and stability experiment, the best formulation was selected. After certain technological process, a new nutritive and healthcare cactus yoghurt was madd.
