微胶囊是指一种具有天然或合成的高分子聚合物壁壳的微型容器或包埋物,可将固体、液体或气体物质包埋,使被包埋物料与外界环境隔绝,最大限度地保持食品、饮料原有的色、香、味、性能和生物活性,防止营养物质在加工贮藏中的破坏和损失;还可以掩盖某些物料的异味或使原来不易加工贮存的气体、液体转化成较为稳定的固体形式。
