摘要
介绍了以牛骨素为原料 ,应用Alcalase蛋白酶制备水解明胶的工艺 ,初步探讨了酶解机理。确定了最佳水解条件为 :温度 60℃、pH 9 5、加酶量 1 5 %、底物浓度 4 0 %、水解时间 3h ,得到产品的分子质量分布范围为 5~ 2 0ku。
This paper introduces the production of gelatin hydrolysates from bovine ossein with Alcalase. Enzymatic reaction mechanism is discussed. It is showed that temperature of 60℃, pH*#9.5, 1.5% of enzyme to substrate ration, 4.0% of substrate concentration and 3 hour reaction time represented the optimal hydrolysis conditions. The product molecular weight is range from 5 to 20*#ku.
