摘要
介绍了用木瓜蛋白酶部分水解花生蛋白制备微胶囊花生粉壁材的工艺.应用正交设计试验找出了最佳的水解条件,即加酶量为10000U/g,水解温度55℃,水解时间16h,底物浓度为1∶10(花生仁∶水).在此水解条件下对花生蛋白进行水解,并通过控制水解度得到溶解性和风味都较好的微胶囊花生粉壁材.
The technological process of preparing the wall material of instant micro-encapsulation peanut powder from peanut hydrolysed partly by papain was discussed.The optimum hydrolysis condition was (determined) by orthogonal design test.The wall material of micro-encapsulation peanut powder obtained had a good solubility and flavour through controlling the degree of hydrolysis of peanut protein.
