摘要
用能分泌 β -葡萄糖苷酶的少孢根霉RT - 3作为菌种对豆粕进行发酵生产大豆异黄酮甙元。少孢根霉RT - 3最大生物量的液态深层发酵工艺 :接种 1.5g少孢根霉于pH值 4 .5的黄豆芽培养液 10 0mL ,含麦芽糖 3g、1%硫酸铵和 0 .4 %尿素 ,37℃振荡培养 2 4h。固态发酵豆粕生产大豆异黄酮甙元最适工艺 :灭菌豆粕在室温加 5 0 %灭菌水拌匀 ,加适量麸皮作碳源 ,再拌匀 ;用乳酸酸化发酵基质 ,再补水 2 5 % ,混合均质 ,接种少孢根霉RT - 3,于 37℃发酵 36h。
Rhizopusoligosporus saito RT-3,which can secret β-glucosidase was used as the strain for the fermentation production of soybean isoflavones from soybean meal. The deep liquid fermentation technology With maximum bioweight of Rhizopusoligosporus saito RT-3 was as follows: 1.5g Rhizopusoligosporus saito RT-3 was injected into the culture solution of soybean sprout which contained 3g maltobiose ,1% ammonium sulfate and 0.4% urea,pH4.5, inoculated 37℃ for 24h in bioreacter. The optimal technology of the solid fermentation for soybean isoflavones was as follows:the sterilized soybean meal was mixed with 50% sterilized water at room temperature,wheat bran was used as carbon sources,acidified with lactic acid,mixed with 25% water,injected Rhizopusoligosporus saito RT-3 , then inoculated at 37℃ for 36h.
