摘要
采用HPLC法测定牛乳中5-HMF含量,5-HMF的回收率可达到91.7%。在不同加工工艺乳制品中,UHT低乳糖奶中5-HMF含量为4.733μg/mL,分别是巴氏杀菌奶和UHT保鲜奶的19倍和10倍。
Hydroxymethylfurfural (5-HMF) is one of the most important intermedia te products in the Maillard reaction. In this article, high-performance liquid c hromatography (HPLC) is used to determine the concentration of 5-HMF in milk. Th e recovery of 5-HMF by this method is up to 91.7%. In the determined samples, UH T low-lactose milk contains plenty of 5-HMF, with the concentration of 4.733靏/ mL, which is 19 times that of the pasteurized milk and 10 times that of the UHT milk.
