本文对复合食品添加剂产品生产的全过程进行了危害分析,确定了关键控制点、关键限值,制订了监测方法、纠偏措施、验证程序和记录。探讨了在复合食品添加剂生产过程中通过引入HACCP卫生安全控制体系提高企业管理水平及产品卫生安全的可行性。
This paper analyses the potential hazards in every processing step of compound food additive, specifies the various CCP for a particular process and details the critical limits, monitoring methods, corrective actions, verification procedures and records. The possibility and advantage of HACCP applied in the production of compound food additives are also discussed.
