摘要
研究了玉米淀粉糊在加热干燥制成预糊化淀粉的过程中,X射线衍射曲线的变化规律。结果表明在加热干燥过程中,会随着水份含量的减少而逐渐形成大量的微晶结构。
In the course of corn starch being pregelatinied by heating and drying, the law of change of X ray diffraction pattern is studied. The results indicate that a large quantities of microcrystals are formed with the reduction of moisture content and that the X ray diffraction pattern of pregelatinized starch is a combination of an unsharp crystalline and an unsharp noncrystalline diffraction peak.
