摘要 研究了Protamex蛋白酶水解大豆蛋白的机理,并采用对数方程的形式对大豆蛋白的酶水解反应进行了数学模拟,得到Protamex蛋白酶水解大豆蛋白的数学模型;提出了测定蛋白质水解反应的K_m的新方法,采用该方法测定得Protamex蛋白酶水解大豆蛋白的K_m为0.67%。 The mechanism for soy protein hydrolysis with protamex was discussed. The kinetic model was established and equation was expressed in logarithmic format. A new method to determine K_m was proposed. The value of K_m used in the new calculation method is 0.67%.
