电化学传感器在国内食品安全中的研究进展

Recent Developments of Electrochemical Sensors on Domestic Food Safety

食品安全今天受到全社会的普遍关注,其检测方法也愈加重要。电化学传感器作为一种重要的检测手段得到了广泛的应用和大量的研究。本文当中,我们从农药残留检测技术、兽药残留检测技术、食品添加剂和违禁化学品检测技术、生物毒素检测技术四个方面对其发展状况做了介绍,以期推动电化学传感器的研究工作和相关数据库的建立工作。

Nowadays, food safety is widely concerned by the whole society. The detection methods are be-coming more and more important. Electrochemical sensors, as a valuable means of detection, have been applied and studied extensively. Herein, we introduce the developments of electrochemistry sensors from four aspects, including pesticide residue detection technology, veterinary drug resi-due detection technology, food additives and banned chemicals detection technology, and biotoxin detection technology in order to promote the investigations on electrochemical sensors and the establishment of related databases.
