摘要 《酒水知识与酒吧经营》是酒店管理专业的特色专业课程。以OBE理论为基础,充分结合酒店管理专业特点和酒水经营实践需求,将酒水知识与酒吧经营中的知识点与思政元素相结合,构建包含知识目标、能力目标与价值目标为一体的多维教学目标体系。在深挖思政基因的基础上,通过教学手段和考核体系的创新实现思政基因的浸润,改变学生对酒水与酒吧“舶来品”的固化印象,为学生建立更加广阔的课程视角,培养其树立正确的价值观和职业观,增强文化自信。 Beverage and Bar management is a characteristic course of hotel management major. Based on the OBE theory, this study fully combines the characteristics of hotel management major and the practical needs of the beverage management, combines the knowledge of Beverage and Bar management with the ideological and political elements, and then builds a multi-dimensional teaching goal system that integrates the knowledge goal, ability goal and value goal. On the basis of deep excavation of ideological and political elements, the infiltration of ideological and political elements is realized through the innovation of teaching methods and assessment system, so as to change students’ inherent cognition of “imported products” of beverages and bars, establish a broader learning perspective for students, cultivate their correct sense of value and professional ideology, and enhance cultural confidence.
