摘要
外婆菜是湘西地区的一道特色小菜,通过发酵之后,产品风味独特营养丰富,该文对外婆菜研究现状、目前存在的问题进行综述,分析了目前外婆菜在工业生产中遇到的问题并提出解决思路,为工业化生产优质产品提供新思路。
Wai Pocai is a characteristic side dish in western Hunan. After fermentation, the product has unique flavor and rich nutrition. This paper reviews the research status and existing problems of Grandmother’s dish, analyzes the problems encountered in the industrial production of Wai Pocai and puts forward solutions, so as to provide new ideas for the industrial production of high-quality products.
