网红抗糖食品阻糖有效性检测方法的研究

摘要 目的:本文对网络销售的网红抗糖、阻糖食品进行检测,优化检测方法,以期为食品监管及规范网络市场提供技术支撑。方法:采用碘比色法、Bernfeld法等方法对网络销售的25种配料表中均标注添加白芸豆水解蛋白的网红抗糖、阻糖食品进行检测,优化检测方法。结果:通过对α-淀粉酶浓度的梯度筛选,确定当α-淀粉酶浓度为0.10 mg/mL时,碘比色法和Bernfeld法既能区分不同阻糖食品的抑制效果,又能让方法选择对测试结果的影响减至最小。结论:在α-淀粉酶浓度较低时,Bernfeld法能更灵敏的区分阻糖食品的抑制效果。当在α-淀粉酶浓度较高或有复合阻糖成分时,碘比色法能较好区分阻糖食品的抑制效果。同时,本文用PCR法未在7种无抑制效果但宣称能抗糖的食品中检出芸豆成分,网售抗糖食品存在一定的虚假宣传,为食品监管及规范网络市场提供一定的技术支撑。 This article uses iodine colorimetry, Bernfeld method and other methods to test the net red anti-sugar and carb-control foods with white kidney bean hydrolyzed protein added in the 25 ingredient lists sold online, and it is found that there is a certain amount of false propaganda in online anti-sugar foods. Through the gradient screening of the concentration of α-amylase, it is determined that when the concentration of α-amylase is 0.10 mg/mL, the iodine colorimetric method and the Bernfeld method can distinguish the inhibitory effects of different samples from sugar-resistant foods. At the same time, the kidney bean component was not detected by PCR in 7 samples, which claimed to have inhibitory effect. There was some false publicity in the online sale of sugar resistant foods, which provided some technical support for food supervision and regulating the online market.
