摘要
危害分析和关键控制点(HACCP)体系是国际上公认的食品安全保证体系,是控制显著危害发生的很有效的食品安全预防体系。HACCP在水产养殖中的运用尚处于起步阶段,但是其在控制水产品质量方面的积极作用是显著的。本论文围绕暗纹东方鲀(Fugu obscurus)的养殖流通环节,运用HACCP的基本原理,分析了养殖流通环节中的潜在危害,确立了养殖流通中的关键控制点,它们分别是药物验收、苗种、分池、越冬倒池、集中净化处理和配送督察。
Hazard analysis and critical control points (HACCP) system is the well-known guarantee system for food safety in the world and also the effective prevention system for controlling the occurrence of remarkable hazard. The application of HACCP to aquaculture is still in the preliminary stage, but the positive effects on controlling the quality of aquatic products are significant. In the paper, the potential hazards in the farming and circulation chain were analyzed and the critical control points (CCPs) were determined by applying HACCP principles to the farming and circulation chain of Fugu obscurus. The CCPs were drug check, offspring krill, pond separation, pond transfer, purification treat- ment all together and distribution supervision.
