云南省核桃维生素B及褪黑激素的检测分析

Detection and Analysis of Vitamin B and Melatonin in Main Walnut Cultivars in Yunnan Province

以云南23个主产区核桃仁为原料,采用HPLC对核桃仁中的维生素B及褪黑激素含量进行分析研究。结果检测到核桃仁中含量较高的维生素B有烟酰胺与维生素B6,其中烟酰胺含量在0.816~2.933 μg/g之间,差异不显著;维生素B6含量在0.064~1.326 μg/g之间,差异显著。抗氧化物质中褪黑激素测定结果显示云南主栽核桃品种仁中褪黑激素含量较高,含量范围在10.48~15.09% ng/g,最高含量可达15.09% ng/g,远远高于国外的2.5~4.5 ng/g。本研究的开展可为云南核桃的精深加工产业的发展奠定基础。

The vitamin B and melatonin content in walnut kernel were studied by using HPLC in 23 main producing areas of Yunnan as raw material. Results show higher content of walnut in vitamin B, vitamin B6 and nicotinamide. The content of nicotinamide was between 0.816 - 2.933 g/g, and the difference was not significant;vitamin B6 content was in 0.064 - 1.326 g/g, and the difference was significant. The determination of melatonin in antioxidant substances showed that the content of melatonin in the kernel of Yunnan walnut was higher;the content was in the range of 10.48 - 15.09% ng/g;the highest content could reach 15.09% ng/g, far higher than the foreign 2.5 - 4.5 ng/g. This research can lay foundation for the development of deep processing of walnut industry in Yunnan.
