高校教职工健康饮食知识及饮食态度之研究

摘要 本研究旨在了解高校教职工对健康饮食知识的认知,以及探讨健康饮食知识与饮食态度的相关性。针对广西Y高校的教职工进行健康饮食知识及饮食态度的问卷调查。调查发现:在237个有效调查样本中,教职工之年龄以36~45岁最多(占43.0%),显示主要为青、中年层。调查结果也显示高校教职工至少有五成以上可能是因为工作忙碌而忽略了关注健康饮食的知识。饮食态度方面,也显示至少有五成的教职工持有负向的饮食态度。本研究结果也发现:越了解健康饮食知识的教职工越同意「吃零食会影响健康」以及「早餐对健康很重要」的饮食态度,然而健康营养饮食知识却没有影响其他项目的饮食态度。本研究结果,可提供政府相关单位及各高等学校作为参考,重视高校教职工的饮食均衡,加强辅导学校饮食营养教育,以提升高校教职工的饮食健康。 The purpose of this study is to understand the healthy diet knowledge of university faculties and to explore the correlation between healthy diet knowledge and eating attitude. A questionnaire survey was conducted on the healthy diet knowledge and eating attitude of the faculties of Y university in Guangxi. The survey found that the majority of faculty members were aged from 36 to 45 (43.0%) among the 237 valid survey samples, which indicated that they were mainly young and middle-aged. The results also showed that more than 50% of the university faculties did not pay attention to the healthy diet knowledge. In terms of eating attitude, it also showed that more than 50% of the faculties had improper eating attitude. The results of this study also found that the more knowledgeable the faculty members were about healthy diet, the more they agreed with the eating attitudes of “snacking is bad for health” and “breakfast is important for health”, while the knowledge about healthy diet had no effect on the eating attitudes of other items. The results of this study can be used as a reference for the officials and universities to pay attention to the balanced diet of the university faculties and promoting the nutritional education in universities, so as to improve the diet health of the university faculties.
