摘要
虾青素属于类胡萝卜素中的叶黄素类,是天然的抗氧化剂。虾青素具有抗氧化,抗炎、抗癌以及调节血糖等多种生理活性,因而广泛应用于食品、制药等领域。本文主要对虾青素的来源、体内代谢和生物活性及其作用机制进行综述,为虾青素后期相关研究与开发应用提供理论依据。
Astaxanthin (ATX) is a xanthophyll carotenoid and belongs to a natural antioxidant. ATX exhibits various physiological activities, such as antioxidant, anti-inflammation, anti-cancer, regulation of blood suger and so on, thereby widely applied to food, medicine. This review summarizes the source, metabolism and biological activities of ATX, and its related mechanisms, aims to provide the theoretical basis for research and comprehensive utilization of ATX.
