摘要
食源性病原菌的检测技术对维持我国的食品安全至关重要,目前所使用的检测技术主要包括传统的培养鉴定方法和以免疫学和分子生物学为主的快速检测方法。对以上方法的技术特点和应用情况进行综述,同时对食源性病原菌检测技术发展面临的困难和研究方法进行分析。
The detection technology of foodborne pathogens was very important to maintain the food safety of our country. The current detection technology mainly included traditional culture and identification methods and rapid detection methods was based on immunology and molecular biology. In this paper, the technical charac-teristics and application of the above methods were reviewed, and the difficulties and research methods of food-borne pathogen detection technology were analyzed.
