To set a scientific foundation for the prevention of Eca at the etiologi...Fungal and mycotoxin contamination has been found in fordstuffs from Cixian County, an area with a high incidence of esophageal carcinoma (Eca). To set a scientific foundation for the prevention of Eca at the etiological level, fungal and mycotoxin contaminations of local foodstuffs in Cixian County were analyzed using classical fungal culture methods and HPLC. From 1990 to 1994, 220 corn/wheat samples and 34 corn samples were studied. As a control, 26 corn samples collected from a relatively low incidence area of Eca in Zanhuang County were analyzed for mycotoxins in 1990. The results showed that fungal contamination in corn and wheat was severe and that several of the predominant contaminating fungi such as Furasium moniliforme, etc. were carcinogenic. HPLC results showed that the detection rate and mean content of the mycotoxin sterigmatocystin (ST) in the mountainous area (5/8; 9. 14 μg/kg) were significantly higher than those in the hilly (0; 0) and plain areas (1/18; 1. 29 μg/kg) as well as in low risk area control samples (3/26; 0. 76 μg/kg). Detection rates of deoxynivalenol (DON) in mountainous and hilly areas (5/8, 4/8 respectively) were slightly higher than that in plain area (8/18), while the mean content of DON in the plain area was significantly higher (90. 45-170. 22 vs 50. 56 and 46. 45 μg/kg).Among the different aflatoxins, AFB1 was detected in samples from the two villages in the plain area for the subsequent two years. The mean content of AFB1 was 0. 0183μg/kg, and the highest level was 0. 0497 μg/kg. No AFB1 was detected in the samples from mountainous and hilly areas. AFG1 was detected in more than half of all the samples, and its concentration ranged from 8. 77 to 46. 51 ng/kg. No AFG2 was found in the samples. Thus, the results suggest that at present, fungal and mycotoxin contamination of foodstuffs in Cixian County are quite common.展开更多

This study was carried out to assess the radionuclide concentrations of ^40K, ^134Cs, ^137Cs, ^131I, ^90Sr, ^239pu, in selected foodstuffs, in order to assess the effects of the elevated levels of radionuclides concentration in environmental media after the FDNPS (Fukushima Daiichi Nuclear Power Station) accident on imported food. HPGe (high purity germanium) detector based spectrometry system coupled with multi-channel analyzer was used for the assessment. The mean concentrations of ^40K, ^134Cs, ^137Cs, ^131I, ^90Sr, ^239pu, were found to be 50.1 ± 2.44 Bq/Kg, 109.6 ± 0.141 Bq/Kg, 134.2 ± 0.027 Bq/Kg, 2.57 ± 0.019 Bq/Kg, 0.59 ± 0.03 Bq/Kg, 0.160 ± 0.033 Bq/Kg, and 0.227 ± 0.021 Bq/Kg respectively. The analysis showed that the radioactivity levels of ^241Am, ^134Cs and ^137Cs were found to be relatively low and within the acceptable levels.展开更多
An effective method for the trace analysis of indoxacarb residue in foodstuffs of plant and animal origin [grapefruit, ginger, fresh soybean, bamboo shoot, qing-gen-cai (cruciferous vegetable), chicken, fish, and po...An effective method for the trace analysis of indoxacarb residue in foodstuffs of plant and animal origin [grapefruit, ginger, fresh soybean, bamboo shoot, qing-gen-cai (cruciferous vegetable), chicken, fish, and pork] was developed using gas chromatography (GC-ECD) and liquid chromatography tandem mass spectrometry (LC-MS/MS). Samples were extracted using acetone and n-hexane mixed solvent (1:2, v/v) and then purified using solid-phase extraction (SPE) columns. The extracts were analyzed using GC-ECD and LC-MS/MS. The multiple reaction monitoring (MRM) scheme used involved transitions of the precursor ions to selected two product ions in which one pair for identification was m/z 529 → 293 and another pair for quantification was m/z 529 → 249. The detection limits (LODs) of the method were 0.0015 and 0.0006 mg kg^-1, and the quantification limits (LOQs) were 0.005 and 0.002 mg kg^-1 for GC-ECD and LC-MS/MS, respectively. The relative standard deviations (RSDs) of recovery for indoxacarb were lower than 15% in 10 types of agro-products. Ten repetitive determinations of recovery achieved good reproducibility for indoxacarb and the recovery ranged from 72.08 to 113.74%. The proposed procedure was applied to the analysis of several real samples of different origin from Fujian Province, China, and 299 samples were screened for indoxacarb residue, of which 5 positive samples were found.展开更多

In our method, the solvent extraction with n-hexane-dichloromethane (50:50, v/v) and cleanup with florisil SPE cartridges using ethyl acetate-ethyl ether (25:75, v/v) as eluents provided adequate recovery of rotenone. The detection of rotenone was then carried out by LC-MS/MS using acetonitrile-water with the 0.1% formic acid (w/v) as the mobile phase. The multiple reaction monitoring (MRM) scheme employed in the approach involved the transitions of the precursor ion to three selected product ions, in which one pair for quantification was m/z 395.3 〉 213.2 and the other two pairs for identification were m/z 395.3 〉 192.2 and 395.3 〉 367.0. The limits of quantification (LOQs) of the method ranged from 0.001 to 0.005 mg kg-1 depending on the matrix. Intra- and inter-day precisions (relative standard deviations, RSDs) for rotenone were less than 7.1 and 14.8%, respectively. Results from repetitive analysis suggested good reproducibility of the method for rotenone residue detection. The recoveries at three concentrations (LOQ, 10LOQ and 100LOQ) ranged from 79.3-118.3% in cabbage, potato, onion, carrot, apple, orange, banana, lichee, tea, and Shiitake mushroom. The proposed procedure was then applied to the analysis of 129 real samples collected from Xiamen, Fujian Province, China. The existence of rotenone was found in two tea products with concentrations of 0.012 and 0.016 mg kg-1, respectively. The method has great potential for routine analysis of monitoring rotenone residue in foodstuffs.展开更多

Molecular techniques employing 16S and 28S rDNA profiles generated by PCR-DGGE were used to detect the variation in microbial community (bacteria, fungi) of Pangasius fish from Viet Nam harvested in different aquaculture farms and during different seasons and Shea tree fruits from five different districts in Mali. The bacterial DNA profiles from Pangasius fish and the fungal DNA profile from Shea tree fruits were specific to each place of production and could be used as a biological bar code certifying the origin of fish and fruit. To follow the product during processing, the authors proposed to identify and validate some pertinent biological markers which come from the environment of the food to assure their traceability during international trade. Background The present experiment aimed to evaluate the effects of commercially processed former foodstuffs(cFF)as dietary substitutes of corn,soybean meal and soybean oil on the growth performance,apparent total trac...Background The present experiment aimed to evaluate the effects of commercially processed former foodstuffs(cFF)as dietary substitutes of corn,soybean meal and soybean oil on the growth performance,apparent total tract digestibil-ity(ATTD),hematobiochemical profiles,and liver gene abundance in broiler chickens.Two hundred one-day-old male ROSS-308 chicks were assigned to 4 dietary groups(5 replicates of ten birds per replicate)according to their average body weight(BW,38.0±0.11 g).All groups received a two-phase feeding program:starter,d 1–12 and grower,d 12–33.The control group(cFF0)was fed a standard commercial feed based on corn,soybean meal and soybean oil.The other three groups received diets in which the feed based on corn,soybean meal,and soybean oil was partially replaced with cFF at a substitution level of 6.25%(cFF6.25),12.5%(cFF12.5)or 25%(cFF25)for the following 33 d.Results The growth performance data showed no differences in BW or average daily gain among groups,although the average daily feed intake decreased during the grower period(12–33 d)and over entire experimental period(1–33 d)in a linear manner as the cFF inclusion level rose(P=0.026),positively affecting the gain to feed ratio(P=0.001).The ATTD of dry matter of the cFF-fed groups were greater with respect to control group and increased throughout the experimental period,whereas the ATTD of ether extract linearly decreased with increasing levels of cFF-fed groups compared with control group and throughout the experimental period(P<0.05).Additionally,a lin-ear increase in the heterophil to lymphocyte ratio,serum cholesterol,triglycerides and alanine-aminotransferase were observed with increasing dietary levels of cFF(P<0.05);however,no differences were observed in lipoprotein lipase or sterol regulatory element binding transcription factor gene abundance.Conclusions The results of this experiment demonstrate that it is possible to incorporate cFF into nutritionally balanced diets for broiler chickens,even up to 25%substitution levels,for up to 33 d without adversely impacting the overall growth performance of male broiler chickens raised under commercial conditions.Further studies are essential to validate the hematological trait findings.展开更多
Food has been documented as one of major routes for human exposure to environmental estrogens(EEs), but information on the occurrence of EEs in animal foodstuffs is still scarce.This study analyzed estrogenic activi...Food has been documented as one of major routes for human exposure to environmental estrogens(EEs), but information on the occurrence of EEs in animal foodstuffs is still scarce.This study analyzed estrogenic activity in 16 types of animal foodstuffs(n = 142) collected from four cities(Wuhan, Guangzhou, Wenzhou and Yantai) of China by combined yeast estrogen screen(YES) bioassay and chemical analysis. By bioassay, all samples' extracts were found to induce estrogenic activities and the bioassay-derived 17β-estradiol equivalent(EEQbio) ranged from 8.29 to 118.32 ng/g. In addition, the samples were analyzed by liquid chromatography coupled to tandem mass spectrometry for further chemical analysis. 17β-Estradiol was found in all samples in this survey at levels of 0.44 to 15.04 ng/g.All samples had 33.1% detection rate of 17α-ethinylestradiol(EE2), and the maximum concentration was 2.80 ng/g. Bisphenol A and 4-nonylphenols were detected in 83.8% and83.1% of samples, with concentrations up to 12.56 ng/g and 35.76 ng/g, respectively.However, the concentrations of estrone, diethylstilbestrol and 4-t-octylphenol were found to be below the limit of detection. A comparison of EEQbiomeasured from the YES assay and EEQchemcalculated from chemical analysis showed good correlation(R2= 0.84). Based on the results, the YES assay can be used as a rapid pre-screening method for monitoring the levels of estrogenic activity in large numbers of animal foodstuffs, and chemical analysis used in combination can be used for the identification of specific EEs.展开更多

Sodium reacts exothermically with aluminium in the presence of an excess of potassium and fluoride ions to form NaK2AlF6 (“elpasolite”). This reaction forms the basis of a ro- bust, reliable analytical procedure suitable for routine process control. The reaction of calcium under similar conditions (to form KCaAlF6) suggests that potentially, calcium may interfere in the determination of sodium in some foodstuffs. Results of an investigation suggest that at molar ratios [Ca]/[Na] < 0.85, an error of <1% of the measured value of sodium is incurred.展开更多

Grenadier is proved to have a h...The composition of muscle tissues of a deep-sea species, the giant grenadier(Albatrossia pectoralis), and a mesopelagic species, the Alaska pollock(Theragra chalcogramma), are compared. Grenadier is proved to have a higher moisture content(91.7%) and lower protein(7.4%) and lipid(0.3%) contents. The factors responsible for the softening and moisture separation during processing of grenadier are identified. Contents of some fractions of non-protein nitrogenous components, including trimethylamine oxide(TMAO) and free amino acids, are clarified. The proportion of the main myofibrillar proteins myosin and actin, which is considered as an indicator of efficiency of structure formation in fish muscle tissue during processing, is almost 20% lower in giant grenadier than in pollock. The effects of endogenous protease, Са^2+-ATPase and transglutaminase on the processes of autolysis, denaturation, and possibility of myofibrillar proteins cross-linking were also studied. The proposed technology of getting a nutritionally balanced, gel-like, ready-to-use foodstuff from grenadier fillet includes its enrichment with pollock muscle tissue and supplementing with a binary structure-forming agent containing collagen and chitosan. Nutritional value of the products is assessed by the method of biological assay and by determining the denaturation changes of myofibrillar proteins. The modes of fine mincing and thermal processing, as well as the shelf-life of the finished product are justified. The developed technology of producing a ready-to-eat food from giant grenadier will allow a more efficient use of this underutilized resource.展开更多

In this paper, a brief analysis of the impact of these elements on the human body is given. A number of consumed foodstuffs in different food rations (diets) were assessed. Six selected basic food rations, which most fully reflect the specific features of nutrition in the Russian Federation, were chosen. The analysis of the concentration of chlorine, bromine, iodine and selenium in a wide range of food and agricultural products was carried out. The daily intake of these elements in the human body from the selected diets was calculated. A comparison of the real income of chlorine, bromine, iodine and selenium in the human body with a physiologically needed intake was performed. It is proposed to use the coefficient of Kr, which is the ratio of actual intake of the element in the human body to physiologically needed intake. Based on this analysis assessed insufficient or excess supply of chlorine, bromine, iodine and selenium in the human body with these diets in the central regions of the European part of Russia was evaluated.展开更多

The cold chain in sub-Saharan countries still remains uncertain. The stacking conditions are hardly respected and are especially limited on temperature control. The equipments of transportation of refrigerated foodstuff and the display cases made for the selling of perishable foodstuff are poorly used. And, many consumers do not have domestic refrigerators to store products. The main reasons for this situation are: poverty, unawareness, unqualified refrigeration technicians and finally an insufficient political policy. Nevertheless, some solutions could be outlined: sensitisation and training at different levels, an international support based on the training and the respect of cold chain norms, the promotion of traditional food conservation techniques (drying, smoking, salting) which are more accessible and appropriate to local feeding styles.展开更多

The health risk of polychlorinated dibenzo-p-dioxins and dibenzofurans(PCDD/Fs) and dioxin-like PCBs(d1-PCBs) to human being should be assessed regularly.To evaluate the contamination levels in various food produc...The health risk of polychlorinated dibenzo-p-dioxins and dibenzofurans(PCDD/Fs) and dioxin-like PCBs(d1-PCBs) to human being should be assessed regularly.To evaluate the contamination levels in various food products in the Chinese market and to assess the dietary exposure of the Chinese population,11 varieties of food groups totaling 534 samples including beef and mutton,chicken and duck,pork,fish and seafood,milk and dairy products were evaluated.The average concentrations of PCDD/Fs in all groups ranged from0.291 to 8.458 pg/g whole weight(w.w.).The average toxic equivalency concentrations were from 0.012 pg TEQ/g w.w.for cereal to 0.357 pg TEQ/g fat for marine oil.OCDD and2,3,7,8-TCDF were the dominant congeners in foodstuffs.The dietary estimated mean intake for the Chinese rural and urban populations were 0.555 and 0.514 pg TEQ/kg body weight/day,respectively,however,the cereal group exposure were higher to the estimate daily intake and contributed 81%for rural and 48%for urban population,followed by fish and seafood which contributed 4%and 15%to the estimate daily intake.The estimated dietary intakes were compared with the toxicological reference values and showed that both rural and urban populations were well below those values.展开更多

The mean content of AFB1 was 0. 0183μg/kg, and the highest level was 0. 0497 μg/kg. No AFB1 was detected in the samples from mountainous and hilly areas. AFG1 was detected in more than half of all the samples, and its concentration ranged from 8. 77 to 46. 51 ng/kg. No AFG2 was found in the samples. Thus, the results suggest that at present, fungal and mycotoxin contamination of foodstuffs in Cixian County are quite common.

The neural network algorithm, the classification regression tree algorithm, the Bayesian network algorithm were selected according to the principle of selecting combination model and were used to build models respectively and then combined, innovatively establishing a combination model which has relatively high precision, strong robustness and better explanatory to predict the results of perishable food transportation meta-morphism monitoring. The relative optimal prediction model of the perishable food transportation metamorphism monitoring system could be got. The relative perfect prediction model can guide the actual sampling work about food quality and safety by prognosticating the occurrence of unqualified food to select the typical and effective samples for test, thus improving the efficiency and effectiveness of sampling work effectively, so as to avoid deteriorated perishable food’s approaching the market to ensure the quality and safety of perishable food transportation. A solid protective wall was built in the protection of general perishable food consumers’ health.

文摘Evaluation of radionuclide concentrations in foodstuffs is of great concern owing to the potential radiological hazards to human health. This study was carried out to assess the radionuclide concentrations of ^40K, ^134Cs, ^137Cs, ^131I, ^90Sr, ^239pu, in selected foodstuffs, in order to assess the effects of the elevated levels of radionuclides concentration in environmental media after the FDNPS (Fukushima Daiichi Nuclear Power Station) accident on imported food. HPGe (high purity germanium) detector based spectrometry system coupled with multi-channel analyzer was used for the assessment. The mean concentrations of ^40K, ^134Cs, ^137Cs, ^131I, ^90Sr, ^239pu, were found to be 50.1 ± 2.44 Bq/Kg, 109.6 ± 0.141 Bq/Kg, 134.2 ± 0.027 Bq/Kg, 2.57 ± 0.019 Bq/Kg, 0.59 ± 0.03 Bq/Kg, 0.160 ± 0.033 Bq/Kg, and 0.227 ± 0.021 Bq/Kg respectively. The analysis showed that the radioactivity levels of ^241Am, ^134Cs and ^137Cs were found to be relatively low and within the acceptable levels.

文摘An effective method for the trace analysis of indoxacarb residue in foodstuffs of plant and animal origin [grapefruit, ginger, fresh soybean, bamboo shoot, qing-gen-cai (cruciferous vegetable), chicken, fish, and pork] was developed using gas chromatography (GC-ECD) and liquid chromatography tandem mass spectrometry (LC-MS/MS). Samples were extracted using acetone and n-hexane mixed solvent (1:2, v/v) and then purified using solid-phase extraction (SPE) columns. The extracts were analyzed using GC-ECD and LC-MS/MS. The multiple reaction monitoring (MRM) scheme used involved transitions of the precursor ions to selected two product ions in which one pair for identification was m/z 529 → 293 and another pair for quantification was m/z 529 → 249. The detection limits (LODs) of the method were 0.0015 and 0.0006 mg kg^-1, and the quantification limits (LOQs) were 0.005 and 0.002 mg kg^-1 for GC-ECD and LC-MS/MS, respectively. The relative standard deviations (RSDs) of recovery for indoxacarb were lower than 15% in 10 types of agro-products. Ten repetitive determinations of recovery achieved good reproducibility for indoxacarb and the recovery ranged from 72.08 to 113.74%. The proposed procedure was applied to the analysis of several real samples of different origin from Fujian Province, China, and 299 samples were screened for indoxacarb residue, of which 5 positive samples were found.

文摘We developed a novel approach to determine rotenone residues in foodstuffs, by integrating solid-phase extraction (SPE) and liquid chromatography/tandem mass spectrometry (LC-MS/MS) technologies, to achieve high sensitivity and selectivity. In our method, the solvent extraction with n-hexane-dichloromethane (50:50, v/v) and cleanup with florisil SPE cartridges using ethyl acetate-ethyl ether (25:75, v/v) as eluents provided adequate recovery of rotenone. The detection of rotenone was then carried out by LC-MS/MS using acetonitrile-water with the 0.1% formic acid (w/v) as the mobile phase. The multiple reaction monitoring (MRM) scheme employed in the approach involved the transitions of the precursor ion to three selected product ions, in which one pair for quantification was m/z 395.3 〉 213.2 and the other two pairs for identification were m/z 395.3 〉 192.2 and 395.3 〉 367.0. The limits of quantification (LOQs) of the method ranged from 0.001 to 0.005 mg kg-1 depending on the matrix. Intra- and inter-day precisions (relative standard deviations, RSDs) for rotenone were less than 7.1 and 14.8%, respectively. Results from repetitive analysis suggested good reproducibility of the method for rotenone residue detection. The recoveries at three concentrations (LOQ, 10LOQ and 100LOQ) ranged from 79.3-118.3% in cabbage, potato, onion, carrot, apple, orange, banana, lichee, tea, and Shiitake mushroom. The proposed procedure was then applied to the analysis of 129 real samples collected from Xiamen, Fujian Province, China. The existence of rotenone was found in two tea products with concentrations of 0.012 and 0.016 mg kg-1, respectively. The method has great potential for routine analysis of monitoring rotenone residue in foodstuffs.
文摘Abstract: One of the great concerns of the customers is the traceability of the products. The authors proposed to link microbial ecology to geographical origin of foodstuffs by a molecular technique joined to an image analysis. Molecular techniques employing 16S and 28S rDNA profiles generated by PCR-DGGE were used to detect the variation in microbial community (bacteria, fungi) of Pangasius fish from Viet Nam harvested in different aquaculture farms and during different seasons and Shea tree fruits from five different districts in Mali. The bacterial DNA profiles from Pangasius fish and the fungal DNA profile from Shea tree fruits were specific to each place of production and could be used as a biological bar code certifying the origin of fish and fruit. To follow the product during processing, the authors proposed to identify and validate some pertinent biological markers which come from the environment of the food to assure their traceability during international trade. It is new analytical method which permits to determine the origin of food or to follow them during international trade.

文摘Background The present experiment aimed to evaluate the effects of commercially processed former foodstuffs(cFF)as dietary substitutes of corn,soybean meal and soybean oil on the growth performance,apparent total tract digestibil-ity(ATTD),hematobiochemical profiles,and liver gene abundance in broiler chickens.Two hundred one-day-old male ROSS-308 chicks were assigned to 4 dietary groups(5 replicates of ten birds per replicate)according to their average body weight(BW,38.0±0.11 g).All groups received a two-phase feeding program:starter,d 1–12 and grower,d 12–33.The control group(cFF0)was fed a standard commercial feed based on corn,soybean meal and soybean oil.The other three groups received diets in which the feed based on corn,soybean meal,and soybean oil was partially replaced with cFF at a substitution level of 6.25%(cFF6.25),12.5%(cFF12.5)or 25%(cFF25)for the following 33 d.Results The growth performance data showed no differences in BW or average daily gain among groups,although the average daily feed intake decreased during the grower period(12–33 d)and over entire experimental period(1–33 d)in a linear manner as the cFF inclusion level rose(P=0.026),positively affecting the gain to feed ratio(P=0.001).The ATTD of dry matter of the cFF-fed groups were greater with respect to control group and increased throughout the experimental period,whereas the ATTD of ether extract linearly decreased with increasing levels of cFF-fed groups compared with control group and throughout the experimental period(P<0.05).Additionally,a lin-ear increase in the heterophil to lymphocyte ratio,serum cholesterol,triglycerides and alanine-aminotransferase were observed with increasing dietary levels of cFF(P<0.05);however,no differences were observed in lipoprotein lipase or sterol regulatory element binding transcription factor gene abundance.Conclusions The results of this experiment demonstrate that it is possible to incorporate cFF into nutritionally balanced diets for broiler chickens,even up to 25%substitution levels,for up to 33 d without adversely impacting the overall growth performance of male broiler chickens raised under commercial conditions.Further studies are essential to validate the hematological trait findings.

文摘Food has been documented as one of major routes for human exposure to environmental estrogens(EEs), but information on the occurrence of EEs in animal foodstuffs is still scarce.This study analyzed estrogenic activity in 16 types of animal foodstuffs(n = 142) collected from four cities(Wuhan, Guangzhou, Wenzhou and Yantai) of China by combined yeast estrogen screen(YES) bioassay and chemical analysis. By bioassay, all samples' extracts were found to induce estrogenic activities and the bioassay-derived 17β-estradiol equivalent(EEQbio) ranged from 8.29 to 118.32 ng/g. In addition, the samples were analyzed by liquid chromatography coupled to tandem mass spectrometry for further chemical analysis. 17β-Estradiol was found in all samples in this survey at levels of 0.44 to 15.04 ng/g.All samples had 33.1% detection rate of 17α-ethinylestradiol(EE2), and the maximum concentration was 2.80 ng/g. Bisphenol A and 4-nonylphenols were detected in 83.8% and83.1% of samples, with concentrations up to 12.56 ng/g and 35.76 ng/g, respectively.However, the concentrations of estrone, diethylstilbestrol and 4-t-octylphenol were found to be below the limit of detection. A comparison of EEQbiomeasured from the YES assay and EEQchemcalculated from chemical analysis showed good correlation(R2= 0.84). Based on the results, the YES assay can be used as a rapid pre-screening method for monitoring the levels of estrogenic activity in large numbers of animal foodstuffs, and chemical analysis used in combination can be used for the identification of specific EEs.
文摘A novel yet simple, rapid and robust thermometric endpoint titration (TET) method for the determination of sodium in various foodstuffs is described. Sodium reacts exothermically with aluminium in the presence of an excess of potassium and fluoride ions to form NaK2AlF6 (“elpasolite”). This reaction forms the basis of a ro- bust, reliable analytical procedure suitable for routine process control. The reaction of calcium under similar conditions (to form KCaAlF6) suggests that potentially, calcium may interfere in the determination of sodium in some foodstuffs. Results of an investigation suggest that at molar ratios [Ca]/[Na] < 0.85, an error of <1% of the measured value of sodium is incurred.
文摘The composition of muscle tissues of a deep-sea species, the giant grenadier(Albatrossia pectoralis), and a mesopelagic species, the Alaska pollock(Theragra chalcogramma), are compared. Grenadier is proved to have a higher moisture content(91.7%) and lower protein(7.4%) and lipid(0.3%) contents. The factors responsible for the softening and moisture separation during processing of grenadier are identified. Contents of some fractions of non-protein nitrogenous components, including trimethylamine oxide(TMAO) and free amino acids, are clarified. The proportion of the main myofibrillar proteins myosin and actin, which is considered as an indicator of efficiency of structure formation in fish muscle tissue during processing, is almost 20% lower in giant grenadier than in pollock. The effects of endogenous protease, Са^2+-ATPase and transglutaminase on the processes of autolysis, denaturation, and possibility of myofibrillar proteins cross-linking were also studied. The proposed technology of getting a nutritionally balanced, gel-like, ready-to-use foodstuff from grenadier fillet includes its enrichment with pollock muscle tissue and supplementing with a binary structure-forming agent containing collagen and chitosan. Nutritional value of the products is assessed by the method of biological assay and by determining the denaturation changes of myofibrillar proteins. The modes of fine mincing and thermal processing, as well as the shelf-life of the finished product are justified. The developed technology of producing a ready-to-eat food from giant grenadier will allow a more efficient use of this underutilized resource.

文摘Domestic cats and dogs are carnivores that have evolved differentially in the nutrition and metabolism of amino acids.This article highlights both proteinogenic and nonproteinogenic amino acids.Dogs inadequately synthesize citrulline(the precursor of arginine)from glutamine,glutamate,and proline in the small intestine.Although most breeds of dogs have potential for adequately converting cysteine into taurine in the liver,a small proportion(1.3%-2.5%)of the Newfoundland dogs fed commercially available balanced diets exhibit a deficiency of taurine possibly due to gene mutations.Certain breeds of dogs(e.g.,golden retrievers)are more prone to taurine deficiency possibly due to lower hepatic activities of cysteine dioxygenase and cysteine sulfinate decarboxylase.De novo synthesis of arginine and taurine is very limited in cats.Thus,concentrations of both taurine and arginine in feline milk are the greatest among domestic mammals.Compared with dogs,cats have greater endogenous nitrogen losses and higher dietary requirements for many amino acids(e.g.,arginine,taurine,cysteine,and tyrosine),and are less sensitive to amino acid imbalances and antagonisms.Throughout adulthood,cats and dogs may lose 34%and 21%of their lean body mass,respectively.Adequate intakes of high-quality protein(i.e.,32%and 40%animal protein in diets of aging dogs and cats,respectively;dry matter basis)are recommended to alleviate aging-associated reductions in the mass and function of skeletal muscles and bones.Pet-food grade animal-sourced foodstuffs are excellent sources of both proteinogenic amino acids and taurine for cats and dogs,and can help to optimize their growth,development,and health.
文摘Since most of the central regions of the European part of Russia are considered selenium and iodine deficient, the assessment of modern real consumption of chlorine, bromine, iodine and selenium by population of these regions with different diets is an important constituent part of medical monitoring. In this paper, a brief analysis of the impact of these elements on the human body is given. A number of consumed foodstuffs in different food rations (diets) were assessed. Six selected basic food rations, which most fully reflect the specific features of nutrition in the Russian Federation, were chosen. The analysis of the concentration of chlorine, bromine, iodine and selenium in a wide range of food and agricultural products was carried out. The daily intake of these elements in the human body from the selected diets was calculated. A comparison of the real income of chlorine, bromine, iodine and selenium in the human body with a physiologically needed intake was performed. It is proposed to use the coefficient of Kr, which is the ratio of actual intake of the element in the human body to physiologically needed intake. Based on this analysis assessed insufficient or excess supply of chlorine, bromine, iodine and selenium in the human body with these diets in the central regions of the European part of Russia was evaluated.

文摘Objective:This study aims to determine the prevalence of intestinal parasites infesting the vegetable foodstuffs and determine the parasitological profile of the vegetable foodstuffs examined.Methods:About 200 randomly sampled vegetable foodstuffs obtained from the vendors of the Balintawak and Divisoria public markets were examined for the occurrence of intestinal parasites.Results:A total of 119(59.5%) vegetable foodstuffs examined were tested positive.The most common parasite found was the Ascaris lumbricoides.No significant differences between the prevalence of intestinal parasites at the two public markets were found(P 】 0.05).Conclusion: The vegetables can be a potential source of parasitic infection.
文摘This article shows out the situation of cold chain in sub-Saharan countries through an investigation carry out in 34 cold stores in Cameroon. The cold chain in sub-Saharan countries still remains uncertain. The stacking conditions are hardly respected and are especially limited on temperature control. The equipments of transportation of refrigerated foodstuff and the display cases made for the selling of perishable foodstuff are poorly used. And, many consumers do not have domestic refrigerators to store products. The main reasons for this situation are: poverty, unawareness, unqualified refrigeration technicians and finally an insufficient political policy. Nevertheless, some solutions could be outlined: sensitisation and training at different levels, an international support based on the training and the respect of cold chain norms, the promotion of traditional food conservation techniques (drying, smoking, salting) which are more accessible and appropriate to local feeding styles.

文摘The health risk of polychlorinated dibenzo-p-dioxins and dibenzofurans(PCDD/Fs) and dioxin-like PCBs(d1-PCBs) to human being should be assessed regularly.To evaluate the contamination levels in various food products in the Chinese market and to assess the dietary exposure of the Chinese population,11 varieties of food groups totaling 534 samples including beef and mutton,chicken and duck,pork,fish and seafood,milk and dairy products were evaluated.The average concentrations of PCDD/Fs in all groups ranged from0.291 to 8.458 pg/g whole weight(w.w.).The average toxic equivalency concentrations were from 0.012 pg TEQ/g w.w.for cereal to 0.357 pg TEQ/g fat for marine oil.OCDD and2,3,7,8-TCDF were the dominant congeners in foodstuffs.The dietary estimated mean intake for the Chinese rural and urban populations were 0.555 and 0.514 pg TEQ/kg body weight/day,respectively,however,the cereal group exposure were higher to the estimate daily intake and contributed 81%for rural and 48%for urban population,followed by fish and seafood which contributed 4%and 15%to the estimate daily intake.The estimated dietary intakes were compared with the toxicological reference values and showed that both rural and urban populations were well below those values.
