The oxidative and physical stability of the reformulated mayonnaise with processed beetroot was investigated and compared with a control(mayonnaise without beetroot)and a commercially available product.Processing of b...The oxidative and physical stability of the reformulated mayonnaise with processed beetroot was investigated and compared with a control(mayonnaise without beetroot)and a commercially available product.Processing of beetroot had an impact on the structural integrity of the antioxidants present.Microwaving(960 W for 7 min)was advantageous for preserving the betalain and polyphenol content of beetroot compared to roasting(180◦C for 90 min)and boiling(100◦C for 30 min).The oxidative stability of mayonnaise samples was determined by Rancimat and the thiobarbituric(TBA)assay.The addition of microwaved beetroot significantly enhanced the oxidative stability of mayonnaise at the end of a storage period of 4 weeks(4◦C).Although no significant differences(P>0.05)were detected between the mayonnaise samples containing beetroot and the commercial control,the latter was less susceptible to oxidation during storage.The turbiscan stability index(TSI)revealed that the commercial mayonnaise was less prone to destabilization phenomena.All the textural parameters increased with the incorporation of beetroot.The sensory evaluation revealed that,with the exception of graininess and uniformity,most of the sensory attributes are preserved if not improved with the addition of beetroot.展开更多

Two products picked from Tan Cuong, Thai Nguyen province, and two others from Phu Ho district, Phu Tho province were evaluated by a trained panel of 12 judges (11 women and 1 man). The sensory evaluation of the dry tea (11 descriptors) was carried out separately from the brewed tea (21 descriptors) and brewed leaf (five descriptors) using an unstructured intensity scale (10 cm). Edible films made from pulp of hibiscus, apple, or carrot containing carvacrol or cinnamaldehyde at 0.5%, 1.5%, or 3% concentrations were added to organic baby spinach in plastic bags. These bags were stored at 4<span style="color:#4F4F4F;font-family:-apple-system, " font-size:16px;white-space:normal;background-color:#ffffff;"="">°</span>C for 20-24h before performing sensory evaluation and measuring changes in physical properties. A randomized block design with an affective test was used. Preference liking was evaluated based on a 9-point hedonic scale for aroma, color, freshness, mouthfeel, flavor, and overall acceptability. Additionally, panelists quantified each sample using a 5-point hedonic scale for pungency, browning, bitterness, off-odor, and sourness. The color and texture of spinach samples were measured. Edible films containing cinnamaldehyde had the highest preference liking based on aroma, color, freshness, mouthfeel, flavor, and overall acceptability than those containing carvacrol and were the most likely to be purchased by panelists;therefore, cinnamaldehyde can potentially be used as an alternative sanitization option. There were no significant (p ≤ 0.05) changes in firmness or color values between spinach treated with antimicrobial films and controls. The results provide the produce industry with options for incorporating antimicrobial films into salad bags without influencing the physical or sensory properties of baby spinach.展开更多

The descriptive sensory analysis (DSA) was used to evaluate the 31 chili pepper samples based on their acid, bell pepper, sweet, tomato, apple, citrus, fruity, herbal, oregano and passion fruit attributes. The data obtained from the DSA enabled the grouping of these 31 chili peppers into six groups based on their different sensory attributes, such as fruity, bell pepper and herbal. The most abundant group (12 of the 31) had the bell pepper, apple, herbal, fruity and sweet attributes. Each group contained different species and different physical appearances, indicating that species or different forms of chili pepper do not define that sensory attribute. Considering the fact that Peruvian peppers are in high demand, the results achieved would be useful for growers, producers and chefs, as well as for further breeding activities.展开更多

Wines from different areas in Mendoza (the most important producer of Malbec) were also included to test possible differences within this province. Ten key attributes were first recognized by descriptive analyses and then carefully evaluated by a trained sensory panel composed of 10 judges. Among the aroma and flavour attributes the analyses focused on plum, red fruits, white pepper, bell pepper, and floral. Three attributes of taste (acidity, astringency, and bitterness) and two attributes of color (red and blue-purple hues) were also analyzed. Statistical differences and similarities in sensory data were tested using analysis of variance (ANOVA), multiple means comparisons by least significant difference test (Fisher LSD), and principal component analysis (PCA). ANOVA and Fisher LSD tests of sensory data showed significant differences (P 〈 0.05) for 6 out of 10 wine attributes: plum, floral, red fruits, astringency, red and blue- purple hues.展开更多

Organic leafy greens were washed with antimicrobials and stored at 4°C for 24 h prior to serving panelists. Antimicrobials evaluated include: 0.1% clove bud, lemongrass, oregano, or cinnamon essential oils;0.1% carvacrol or citral;3% grapeseed, apple, or 10%/7% olive extract;combination of essential oils with extracts;3% hydrogen peroxide;and untreated control. A randomized block design with an affective test was used and 60 panelists were asked to evaluate samples for preference liking based on a 9-point hedonic scale and for sensory attributes based on a 5-point hedonic scale. Changes in texture and color of leafy greens were measured using a Texture analyzer and a Chroma Meter, respectively. On the basis of preference liking, overall acceptability of spinach and lettuce treated with 0.1% cinnamon oil was ranked the highest (7.5 ± 1.4 and 7.1 ± 1.7, moderately liked), respectively. For texture analysis, washing iceberg lettuce with 0.1% oregano oil + 10% olive extract and spinach with 0.1% lemongrass oil + 1% apple extract yielded the highest firmness values of F = 783.1 ± 53.8 Newtons and 939.30 ± 35.2 Newtons, respectively. Based on the International Commission on Illumination CIE LAB color schemes, treatment with 0.1% oregano oil + 10% olive extract had the greatest impact on color of iceberg lettuce with the lowest L value* (44.5 ± 6.2) indicating the darkest color. These results will help identify plant antimicrobials that have the least impact on sensory properties of organic leafy greens and are preferred by consumers.展开更多

In this work, sensory traits of five Italian artisanal beers were explored by a trained panel, through different sensory analysis methods: Quantitative Descriptive Analysis (QDA) and a sensory dynamic method, Temporal Dominance of Sensations (TDS). The sensory profiles obtained through these methods were compared to the description given by an expert beer taster. The trained panel (n = 12) evaluated five Tuscan beers, manufactured in Maremma area, Tuscany region, first through QDA. Twenty-eight sensory properties (visual, tactile, flavor and aromatic traits) were evaluated through a nine point scale. The descriptive profile was enriched by a dynamic sensory evaluation method, TDS. TDS was used by panelists to obtain a “real-time” flavor profile of the craft beers. During tasting, TDS provided information on the most striking flavor traits chosen among: floral, honey, roasted, chestnut, spicy, fruity, hoppy, and malty, of each beer. A PCA analysis showed the importance of the flavor attributes for beer profile compared to the expert taster description. Results highlighted the main traits of each beer and showed the validity of different profile methods. The interesting outcomes both provided useful profile patterns for brewers aiming at targeting specific segments of beer market and supported the development of interesting instruments for beer sensory analysis.展开更多

This paper analysed the production process of the agro industrial cooperative producers of macadamia nut (Coopmac), located in the town of Sao Mateus-ES/Brazil, and responsible for the production and marketing benefits for the states of Espirito Santo and Bahia. This analysis was performed in order to identify new opportunities for developing new products. The following steps were explored: analysis of the current procedure, ideas generation, analysis of potential ideas, development of a product concept and development of a prototype product. In cooperative, macadamia oil was only extracted. It was decided to develop a potential product from this oil. Initially, chemical analyzes were performed with this oil and opted for the production of soaps, liquid and bar. During this step, the methodology of design of experiments was used to develop the prototype. Sensory analysis, based on the LAM type hedonic scale, was used in the tests. The data were analyzed and could be distinguished the best formulation and the main effects for each assessed parameter. In this step, the statistical analysis software was used. From the value of the overall quality of the sample, greater acceptance for liquid soaps was obtained for a formulation with lower oil volume and higher volume of amphoteric. When concerning the sample bar soaps, the best formulation had the lower ratio of oil volume, the higher volume of amphoteric and lower mass of clay. The authors expect to contribute to generation of scientific and technological knowledge in order to effectively meet the practical needs of efforts directed to the production of macadamia nuts in the state of Espirito Santo.展开更多

Optimal lettuce dehydration time was determined through charting the weight lost and examining the curve. This was found after 180 minutes at 60<sup>°<span></span></sup><span>C</span><span>. Two formulas were developed, the first with 1.1 g of dehydrated romaine lettuce and 0.2 g of dehydrated banana, and the second with 1.1 g of dehydrated romaine lettuce and 0.4 g of dehydrated banana. Sensory analysis was conducted using sorting tests for taste, aroma, paired preferences and intention to purchase. Tasters preferred the formula with a lower quantity of dehydrated banana. 85%</span><span> of tasters indicated that they would buy this infusion due to its potential functional properties for overcoming insomnia.</span>展开更多

The achievement of the stability of the parameters of 150 different lots of biscuits has been measured before, during and after the implementation of IMS in the manufacturing company The performed water activity analysis and sensory analysis confirmed that despite the dynamic changes in the internal and external environments as well as the significant changes in the requirements of the standards and the legislation, the implemented IMS has allowed the maintenance of the stable quality and safety of the biscuit products.展开更多

After the formulation of the mixed juice in different proportions and the sensory evaluation, it appears that the juice of formulation E is more appreciated by the tasters. Indeed, this juice has preferred sensory characteristics in terms of color (6.90), flavor (5.47), odor (6.42), settling (6.28) and overall acceptance (6.53). Taste interaction is a well-known phenomenon in sensory stodies,but how to quantify the magnitode of the effect of one tastant on other taste attribute(s)is still largely unsolved,let alone further explorations from a...Taste interaction is a well-known phenomenon in sensory stodies,but how to quantify the magnitode of the effect of one tastant on other taste attribute(s)is still largely unsolved,let alone further explorations from a salivary biochemistry perspective.Upon acquiring the individual taste threshold and evaluating the just noticeable difference(JND).this stody firstly established a quantitative method to assess the magnitude of taste interaction in a binary taste mixture by evaluating the concentration difference upon psychologically-comparable stimulation.The change of salty taste intensity(CSI)was therefore defined as the subtraction of JND using sour-salty taste stimulant from JND using pure salty taste stimulant,with a dimension of concentration in mmol/L.CSI was then used to demonstrate how citric acid affected salty taste perception in a salty-sour binary taste mixture in 16 young and healthy participants.Concentrations of citric acid used in the binary taste mixtore were 0.05.0.09.0.14.0.24 and 0.40 mmolL,respectively.and results showed that salty taste perception was enhanced(average CSI of 0.93 mmolL)when the citric acid concentration was low(at 0.05 and 0.09 mmolL).but with an increasing concentration of citric acid ranging from 0.14 to 0.40 mmol/L,this effect gradually turned from enhancement to suppression of salty taste perception(correspondingly a continoously decreasing CSI all the way down to an average of-2.94 mumol/L).It was also found that cystatin SN concentration in participants'unstimulated saliva samples was significantly negatively correlated with salty taste threshold(with and without the presence of citric acid),and it was one of the most significant factors affecting CSI,s shown in multiple regression analysis.Carbonic anhydrase VI concentration in participants'unstimulated saliva sanples was also found to be significantly negatively correlated with salty taste recognition(with and without presence of citric acid).but it did not pose significant effect on CSI.From these results,this study had not only demonstrated a citric acid concentration-dependent salty taste perception phenomenon based on a proposed methodology to quantitively assess the taste interaction in binary taste mixtures.but also showed how salivary biochemical properties(cystatin SN and carbonic snhydrase VI)might have been assciated with salty taste perception during food oral processing.展开更多

文摘The oxidative and physical stability of the reformulated mayonnaise with processed beetroot was investigated and compared with a control(mayonnaise without beetroot)and a commercially available product.Processing of beetroot had an impact on the structural integrity of the antioxidants present.Microwaving(960 W for 7 min)was advantageous for preserving the betalain and polyphenol content of beetroot compared to roasting(180◦C for 90 min)and boiling(100◦C for 30 min).The oxidative stability of mayonnaise samples was determined by Rancimat and the thiobarbituric(TBA)assay.The addition of microwaved beetroot significantly enhanced the oxidative stability of mayonnaise at the end of a storage period of 4 weeks(4◦C).Although no significant differences(P>0.05)were detected between the mayonnaise samples containing beetroot and the commercial control,the latter was less susceptible to oxidation during storage.The turbiscan stability index(TSI)revealed that the commercial mayonnaise was less prone to destabilization phenomena.All the textural parameters increased with the incorporation of beetroot.The sensory evaluation revealed that,with the exception of graininess and uniformity,most of the sensory attributes are preserved if not improved with the addition of beetroot.
文摘Green tea is a popular product with a high consumption in Vietnam. Moreover, green tea produced in Tan Cuong commune, Thai Nguyen province, has long been recognized for its superior quality to those coming from other regions of the country. This study aims at comparing the tea from Thai Nguyen and Phu Tho and finding out if the difference can be identified through sensory analysis. Two products picked from Tan Cuong, Thai Nguyen province, and two others from Phu Ho district, Phu Tho province were evaluated by a trained panel of 12 judges (11 women and 1 man). The sensory evaluation of the dry tea (11 descriptors) was carried out separately from the brewed tea (21 descriptors) and brewed leaf (five descriptors) using an unstructured intensity scale (10 cm). Statistic analyses have shown differences between regions in all three groups of attributes: dry leaf, liquor and brewed leaf.
文摘The effects of antimicrobial edible films containing carvacrol and cinnamaldehyde on organic baby spinach were determined via sensory analysis and changes in physical properties. Edible films made from pulp of hibiscus, apple, or carrot containing carvacrol or cinnamaldehyde at 0.5%, 1.5%, or 3% concentrations were added to organic baby spinach in plastic bags. These bags were stored at 4<span style="color:#4F4F4F;font-family:-apple-system, " font-size:16px;white-space:normal;background-color:#ffffff;"="">°</span>C for 20-24h before performing sensory evaluation and measuring changes in physical properties. A randomized block design with an affective test was used. Preference liking was evaluated based on a 9-point hedonic scale for aroma, color, freshness, mouthfeel, flavor, and overall acceptability. Additionally, panelists quantified each sample using a 5-point hedonic scale for pungency, browning, bitterness, off-odor, and sourness. The color and texture of spinach samples were measured. Edible films containing cinnamaldehyde had the highest preference liking based on aroma, color, freshness, mouthfeel, flavor, and overall acceptability than those containing carvacrol and were the most likely to be purchased by panelists;therefore, cinnamaldehyde can potentially be used as an alternative sanitization option. There were no significant (p ≤ 0.05) changes in firmness or color values between spinach treated with antimicrobial films and controls. The results provide the produce industry with options for incorporating antimicrobial films into salad bags without influencing the physical or sensory properties of baby spinach.
文摘In this work, 31 native Peruvian chili peppers were evaluated for their agro-morphological characteristics and sensory attributes. The descriptive sensory analysis (DSA) was used to evaluate the 31 chili pepper samples based on their acid, bell pepper, sweet, tomato, apple, citrus, fruity, herbal, oregano and passion fruit attributes. The data obtained from the DSA enabled the grouping of these 31 chili peppers into six groups based on their different sensory attributes, such as fruity, bell pepper and herbal. The most abundant group (12 of the 31) had the bell pepper, apple, herbal, fruity and sweet attributes. Each group contained different species and different physical appearances, indicating that species or different forms of chili pepper do not define that sensory attribute. Considering the fact that Peruvian peppers are in high demand, the results achieved would be useful for growers, producers and chefs, as well as for further breeding activities.
文摘Sensory evaluation was performed on 32 commercial Malbec wines (2008 and 2009 vintages) produced in five provinces of Argentina. Wines from different areas in Mendoza (the most important producer of Malbec) were also included to test possible differences within this province. Ten key attributes were first recognized by descriptive analyses and then carefully evaluated by a trained sensory panel composed of 10 judges. Among the aroma and flavour attributes the analyses focused on plum, red fruits, white pepper, bell pepper, and floral. Three attributes of taste (acidity, astringency, and bitterness) and two attributes of color (red and blue-purple hues) were also analyzed. Statistical differences and similarities in sensory data were tested using analysis of variance (ANOVA), multiple means comparisons by least significant difference test (Fisher LSD), and principal component analysis (PCA). ANOVA and Fisher LSD tests of sensory data showed significant differences (P 〈 0.05) for 6 out of 10 wine attributes: plum, floral, red fruits, astringency, red and blue- purple hues.
文摘The objective was to study the sensory attributes of organic leafy greens treated with plant antimicrobials and identify treatments most accepted by panelists. Organic leafy greens were washed with antimicrobials and stored at 4°C for 24 h prior to serving panelists. Antimicrobials evaluated include: 0.1% clove bud, lemongrass, oregano, or cinnamon essential oils;0.1% carvacrol or citral;3% grapeseed, apple, or 10%/7% olive extract;combination of essential oils with extracts;3% hydrogen peroxide;and untreated control. A randomized block design with an affective test was used and 60 panelists were asked to evaluate samples for preference liking based on a 9-point hedonic scale and for sensory attributes based on a 5-point hedonic scale. Changes in texture and color of leafy greens were measured using a Texture analyzer and a Chroma Meter, respectively. On the basis of preference liking, overall acceptability of spinach and lettuce treated with 0.1% cinnamon oil was ranked the highest (7.5 ± 1.4 and 7.1 ± 1.7, moderately liked), respectively. For texture analysis, washing iceberg lettuce with 0.1% oregano oil + 10% olive extract and spinach with 0.1% lemongrass oil + 1% apple extract yielded the highest firmness values of F = 783.1 ± 53.8 Newtons and 939.30 ± 35.2 Newtons, respectively. Based on the International Commission on Illumination CIE LAB color schemes, treatment with 0.1% oregano oil + 10% olive extract had the greatest impact on color of iceberg lettuce with the lowest L value* (44.5 ± 6.2) indicating the darkest color. These results will help identify plant antimicrobials that have the least impact on sensory properties of organic leafy greens and are preferred by consumers.
文摘In recent years, the interest on craft beer has been increasingly growing. In this work, sensory traits of five Italian artisanal beers were explored by a trained panel, through different sensory analysis methods: Quantitative Descriptive Analysis (QDA) and a sensory dynamic method, Temporal Dominance of Sensations (TDS). The sensory profiles obtained through these methods were compared to the description given by an expert beer taster. The trained panel (n = 12) evaluated five Tuscan beers, manufactured in Maremma area, Tuscany region, first through QDA. Twenty-eight sensory properties (visual, tactile, flavor and aromatic traits) were evaluated through a nine point scale. The descriptive profile was enriched by a dynamic sensory evaluation method, TDS. TDS was used by panelists to obtain a “real-time” flavor profile of the craft beers. During tasting, TDS provided information on the most striking flavor traits chosen among: floral, honey, roasted, chestnut, spicy, fruity, hoppy, and malty, of each beer. A PCA analysis showed the importance of the flavor attributes for beer profile compared to the expert taster description. Results highlighted the main traits of each beer and showed the validity of different profile methods. The interesting outcomes both provided useful profile patterns for brewers aiming at targeting specific segments of beer market and supported the development of interesting instruments for beer sensory analysis.
文摘The macadamia tree (macadamia integrifolia maiden & betche), originally from Australia, has smooth and rounded fruits, this walnut produces richly flavoured nuts, which are used "in natura" accompanying appetizers, in the manufacture of candies, being well accepted by the population. This paper analysed the production process of the agro industrial cooperative producers of macadamia nut (Coopmac), located in the town of Sao Mateus-ES/Brazil, and responsible for the production and marketing benefits for the states of Espirito Santo and Bahia. This analysis was performed in order to identify new opportunities for developing new products. The following steps were explored: analysis of the current procedure, ideas generation, analysis of potential ideas, development of a product concept and development of a prototype product. In cooperative, macadamia oil was only extracted. It was decided to develop a potential product from this oil. Initially, chemical analyzes were performed with this oil and opted for the production of soaps, liquid and bar. During this step, the methodology of design of experiments was used to develop the prototype. Sensory analysis, based on the LAM type hedonic scale, was used in the tests. The data were analyzed and could be distinguished the best formulation and the main effects for each assessed parameter. In this step, the statistical analysis software was used. From the value of the overall quality of the sample, greater acceptance for liquid soaps was obtained for a formulation with lower oil volume and higher volume of amphoteric. When concerning the sample bar soaps, the best formulation had the lower ratio of oil volume, the higher volume of amphoteric and lower mass of clay. The authors expect to contribute to generation of scientific and technological knowledge in order to effectively meet the practical needs of efforts directed to the production of macadamia nuts in the state of Espirito Santo.
文摘An infusion was developed based on green romaine lettuce leaves and banana. Further, its sensorial acceptability was evaluated as a possible alternative treatment for insomnia. The romaine lettuces and bananas used were washed, chopped, dehydrated and ground. Optimal lettuce dehydration time was determined through charting the weight lost and examining the curve. This was found after 180 minutes at 60<sup>°<span></span></sup><span>C</span><span>. Two formulas were developed, the first with 1.1 g of dehydrated romaine lettuce and 0.2 g of dehydrated banana, and the second with 1.1 g of dehydrated romaine lettuce and 0.4 g of dehydrated banana. Sensory analysis was conducted using sorting tests for taste, aroma, paired preferences and intention to purchase. Tasters preferred the formula with a lower quantity of dehydrated banana. 85%</span><span> of tasters indicated that they would buy this infusion due to its potential functional properties for overcoming insomnia.</span>

This paper explores the possibilities of achieving stable sensory and microbiological parameters of the biscuits, through the implementation of IMS. An analysis was carried out of the factors affecting the achievement of stable quality. The achievement of the stability of the parameters of 150 different lots of biscuits has been measured before, during and after the implementation of IMS in the manufacturing company The performed water activity analysis and sensory analysis confirmed that despite the dynamic changes in the internal and external environments as well as the significant changes in the requirements of the standards and the legislation, the implemented IMS has allowed the maintenance of the stable quality and safety of the biscuit products.

Thus, the formulation of mixed juice based on cashew apple juice and passion fruit juice has proved to be a way of adding value to the cashew apple, a co-product of the production of the nut. After the formulation of the mixed juice in different proportions and the sensory evaluation, it appears that the juice of formulation E is more appreciated by the tasters. Indeed, this juice has preferred sensory characteristics in terms of color (6.90), flavor (5.47), odor (6.42), settling (6.28) and overall acceptance (6.53). 文摘Virgin olive oil is obtained from the fruit of the olive tree, and only using physical processes, without resorting to refining steps, the absence of the latter allows the olive oil to retain all its antioxidants. This work is a contribution to the characterization of the properties of olive oil in the region of Tlemcen. They relate more particularly to the comparison of the physicochemical properties of two oils, one from traditional extraction and the other from industrial extraction. To do this, the first objective of studies of the two chains of transformation (traditional and industrial) was made followed by a physicochemical and organoleptic comparison of these two oils of olives, to conclude on the advantages and disadvantages of each of the two processes.

文摘The study focuses on the physico-chemical characteritics of the wild fruit Meyna laxiflora Robyns(Alu)and fruit powder,which was gathered from the Konkan region of Maharashtra Alu fruit powder is made by using a drying aid called maltodextrin(MD).Powder samples(MP1,MP2,MP3,MP4 and MP5)were made using different amounts of MD(05,10,15,2.0 and 2.5 g).Preliminary phytochemical screening of fnuit pulp and powder showed the presence of some phytoconstituents such as reducing sugar,saponin,flavonoids,and terpenoids,whereas akaloids,tannins,steroids and protein were absent in both.The parameters of the powder are durectly infuenced by the amount of MD,as evidenced by the variations in bulk density,total soluble solids,pH,specific gravity and the proximate among the powder samples.High solubility was found in the sample with a medium of MD.The highest of particle distribution was found in MD-added samples MP2(1 g),MP3(1.5 g),MP4(2 g)whereas the raw(MPO)showed the 1least.Sensory analysis was done using 9-point hedonic scale,which revealed that MP2,MP3,and MP4 were highly acceptable.This study assumed that fresh Alu fuit,palp and in the form of powder can be useful for the development of new products.

文摘Taste interaction is a well-known phenomenon in sensory stodies,but how to quantify the magnitode of the effect of one tastant on other taste attribute(s)is still largely unsolved,let alone further explorations from a salivary biochemistry perspective.Upon acquiring the individual taste threshold and evaluating the just noticeable difference(JND).this stody firstly established a quantitative method to assess the magnitude of taste interaction in a binary taste mixture by evaluating the concentration difference upon psychologically-comparable stimulation.The change of salty taste intensity(CSI)was therefore defined as the subtraction of JND using sour-salty taste stimulant from JND using pure salty taste stimulant,with a dimension of concentration in mmol/L.CSI was then used to demonstrate how citric acid affected salty taste perception in a salty-sour binary taste mixture in 16 young and healthy participants.Concentrations of citric acid used in the binary taste mixtore were 0.05.0.09.0.14.0.24 and 0.40 mmolL,respectively.and results showed that salty taste perception was enhanced(average CSI of 0.93 mmolL)when the citric acid concentration was low(at 0.05 and 0.09 mmolL).but with an increasing concentration of citric acid ranging from 0.14 to 0.40 mmol/L,this effect gradually turned from enhancement to suppression of salty taste perception(correspondingly a continoously decreasing CSI all the way down to an average of-2.94 mumol/L).It was also found that cystatin SN concentration in participants'unstimulated saliva samples was significantly negatively correlated with salty taste threshold(with and without the presence of citric acid),and it was one of the most significant factors affecting CSI,s shown in multiple regression analysis.Carbonic anhydrase VI concentration in participants'unstimulated saliva sanples was also found to be significantly negatively correlated with salty taste recognition(with and without presence of citric acid).but it did not pose significant effect on CSI.From these results,this study had not only demonstrated a citric acid concentration-dependent salty taste perception phenomenon based on a proposed methodology to quantitively assess the taste interaction in binary taste mixtures.but also showed how salivary biochemical properties(cystatin SN and carbonic snhydrase VI)might have been assciated with salty taste perception during food oral processing.
