高含量柑桔固体饮料工艺特性研究

研究了高含量柑桔固体饮料载体的ＤＥ值，组份及粘度特性：探讨了载体粘度与喷雾干燥的关系；测定了高含量柑桔固体饮料的营养成分。研究表明：１．载体ＤＥ值与其组份、粘度有关，选择ＤＥ值在２０左右的麦芽糊精作为载体，有利于喷雾干燥过程及防止粘壁，并使产品具有高的抗吸水性能。２．载体一柑桔汁体系为牛顿流体，体系粘度随温度升高而降低，随浓度增大而增大。３．蔗糖、柠檬酸可有效降低体系粘度。４．高含量柑桔固体饮料含有丰富的营养成分。
