苦瓜腌制工艺研究

本文以苦瓜作为制作腌菜的主要原料,对腌苦瓜的配比和制作方法进行了研制。经过单因素试验与正交试验得出的数据,确定了苦瓜腌制的最优配比及工艺流程,即以苦瓜添加量100%作为标准,加入13%的食盐、29%的食醋、7%的小米椒,经过28s的加盐焯水,在4-8℃的温度下腌制24h。制作出来的成品具有苦瓜的独特滋味和风味,清凉爽口,还有开胃、清热解毒的作用,发展前景十分广阔。

火龙果山药泥的工艺研究

本试验是在了解火龙果、牛奶、山药、蜂蜜的营养价值后,将其充分运用结合,所做的火龙果山药泥工艺研究。在单因素试验的基础上,再进行正交试验分析,从而得出最适合火龙果山药泥的配方。最佳工艺为:山药泥50g、火龙果粒10g、蜂蜜9g、牛奶6g、火龙果皮汁3g、山药的蒸制时间为25min。
