Effect of defatted flaxseed gum powder addition on the quality of sesame paste

The study explored the influence of defatted flaxseed gum powder(DFGP) on the stability and quality of sesame paste by measuring and analyzing its composition, color, texture, particle size, centrifugal oil separation rate,rheological properties, and microstructure. The results showed that the moisture and polysaccharide content of sesame paste was increased as the DFGP increased. Additionally, the hardness, gumminess, and chewiness of the sesame paste was improved, while the presence of particles with small particle size(1–100 μm) was decreased.The rate of oil precipitation was reduced by 28.99% when the amount of DFGP was 6%. The sesame paste samples exhibited pseudoplastic behavior, demonstrating shear thinning. As the shear rate increased, the apparent viscosity of sesame paste gradually decreased. Both the storage modulus(G’) and the loss modulus(G’’) increased as the shear frequency increased. The microstructure observation revealed that protein and oil were evenly distributed in the sesame paste system, and the addition of DFGP enhanced the bonding between oil and protein.This study can provide valuable references for high-quality sesame paste products in the food industry. 展开更多

Flaxseed oil(FSO)rich in n-3 polyunsaturated fatty acids(PUFAs)can protect against obesity and insulin resistance,but the underlying mechanism is unknown.An integrative multiomics of the microbiome and targeted metab olomics approach was performed to investigate the possible pathway for flaxseed oil supplementation on reducing serum total cholesterol,triglyceride and epididymal adipose in high-fat diet mice.FSO ameliorated the gut microbial dysbiosis by increasing the community diversity and the abundance of Clostridiales and Ruminococcaceae.These effects were associated with the regulation of bile acid(BAs)in the feces.FSO reduced the concentrations of conjugated BAs,such as cholic acid,tauro-α-murocholic acid,and tauro-ursodesoxycholic acid in feces,which in turn inhibit the intestinal farnesoid X receptor(FXR)-fibroblast growth factor(FGF)15 signaling pathway.Further analysis revealed that FSO activated FXR in the liver and regulated downstream gene expression(SHP,SREBP-1c,and CPT-1a),which promoted lipolysis and inhibited lipogenesis.The results of this study suggest that FSO modulates serum lipid concentrations by regulating the gut microbiota,FXR-FGF15 signaling and BA metabolism. 展开更多

This study characterized and compared the physical and emulsifying properties of pea protein(PP)and its modified proteins(ultrasound treated-PP(PPU),flaxseed gum(FG)treated PP(PPFG)and ultrasound treated-PPFG(PPFGU)).The results showed FG triggered the formation of loosely attached complex with PP via physical modification under gentle magnetic stirring at pH 7.0,while ultrasound played an important role in reducing protein size,increasing surface hydrophobicity and molecular fluidity onto oil-water interface.So ultrasound further enhanced the interaction of PP with FG,and produced the PPFGU complex with smaller droplet size,higherζ-potential and lower turbidity.Further,combination of FG and ultrasound improved the physical properties of PP with higher viscosity,stiffer gels(defined as higher elastic modulus),stronger hydrophobic properties,better thermal stability,and fast protein absorption rate.Therefore,the PPFGU coarse emulsion performed highest emulsifying activity index(EAI)and emulsion stability index(ESI)that the stabilized nanoemulsion obtained smallest droplet size,higherζ-potential,and longest storage stability.The combination of FG and ultrasonic treatment will be an effective approach to improving the emulsifying property and thermal stability of PP,which can be considered as a potential plant-based emulsifier applied in the food industry. 展开更多

High-fat diet(HFD)could induce obese and microbial dysbiosis,the latter of which has great impact on host health.Dietary polysaccharides are well known to have a wide range of biological benefits for bowel health.In this study,we investigated the effects of rapeseed polysaccharide(RSP)on overweight and gut microbiota in highfat-diet(HFD)fed rats.RSP effectively alleviated the hyperglycemia and lipid metabolic disorder in serum,which was found closely related to the modulation of intestinal microbiota.Supplementation of RSP regulated the intestinal microbiome by increasing the proportion of butyrate acid producer Blautia(P<0.05),Dorea(P<0.01)and Akkermansia genus and inhibiting the growth of bacterial species associated with inflammation such as unclassified Ruminococcaceae(P<0.05).Moreover,the restoration of total short-chain fatty acids(SCFAs),especially propionate and butyrate might be an important strategy for mitigating HFD induced metabolic disorders.Our results suggested that RSP is a potential prebiotic for preventing obese induced HFD through regulating the gut microbiota. 展开更多

Plant phenolic acids are good sources of antioxidants and sinapic acid(SA)is one of them that can be applied in protein-based food system.However,little research is available regarding interactions between almond protein(AP)and SA.In this study,structure-affinity interaction between SA and AP,structure and antioxidant activity of proteins were investigated.Different mathematical models showed that Ka of binding SA and AP were 3.27×10^4 L/mol and 3.08×10^4 L/mol.CD(Circular dichroism)spectroscopy and FT-IR(Fourier transform infrared)spectroscopy showed that the amount of random coil andα-helix decreased whileβ-sheet increased in AP-SA complex.In combination,the interaction model of AP-SA complex was static quenching and attributed to hydrophobic interaction.Further,AP-SA complex exerted better DPPH radical scavenging ability(36.97±0.78%),ABTS+radical scavenging ability(47.26±0.45%),and higher ORAC value(2.41±0.23 M trolox/g)compared to AP.In the further,SA can be applied in protein matrix to improve film stability,gel strength and restraining fat oxidation degradation. 展开更多

Nutmeg essential oil with volatile components is sensitive to oxygen, light, water and high temperature. Spray-drying is widely used as an encapsulation technique for improving compound stability during processing and storage. In this study, influence of encapsulated matrix on spray-dried nutmeg essential oil microcapsule was investigated using blends of maltodextrin and either gum Arabic(GA-MD), or octenyl succinic acid modified starch(OSA-MD) as wall materials. Characteristics of spray-dried powders from these 2 wall materials were evaluated and compared. Powder property analysis indicated that GA-MD microcapsules presented larger size, higher moisture and poorer flowability compared with OSA-MD microcapsules. Fourier transforms infrared spectroscopy and thermogravimetric analysis showed that both GA-MD and OSA-MD microcapsules improved the stability of nutmeg essential oil. However, GA-MD microcapsules exhibited higher storage stability than OSA-MD microcapsules. This research provided theoretical foundation for wall material choice of microcapsule and nutmeg essential oil utilization in food industry. 展开更多

Canolol is a natural polyphenolic compound in rapeseed oil with multiple biological activities.Anti-cancer potential of canolol has been proposed in some studies.However,the effect and underlying mechanism of canolol on human gastric carcinoma(AGS)cells have not been well understood.This study showed that canolol had significant inhibition in proliferation and strongly apoptotic effects in AGS cells,which were verified by the decrease of cell viability,high level of reactive oxygen species(ROS),and damage in mitochondria membrane potential(MMP).Treatment with canolol arrested cells in S phase,and increased expressions of Bax,cleaved caspase-9,and cleaved caspase-3 proteins.Meanwhile,low expression of Bcl-2 and cytochrome C(Cyt C)release were found.The expressions of PI3K(phosphoinositide 3-kinase)and p-AKT(phosphorylated serine/threonine kinase)were also downregulated.Overall,these results suggested that canolol inhibited proliferation and induced apoptosis in AGS cells by regulating PI3K/Akt pathway,demonstrating a potential in gastric cancer treatment. 展开更多

Recent studies have shown that the highly susceptibility to oxidation ofα-linolenic acid(ALA)enriched emulsion delivery system was harmful for human health which limited their incorporation into functional food.Impacts of natural sesamol(SOH)and sesamin(SES)on stability of flaxseed oil-in-water emulsion were investigated.Results showed that SOH indicated higher antioxidant activity and significantly prolonged the time of emulsion oil-off by retarding oil droplet aggregation in a dose dependent manner throughout storage.Moreover,SOH showed substantial extended lag phase of lipid oxidation products,especially for secondary oxidation products(thiobarbituric acid-reactive substances,TBARS),with a maximum reduction of 70%with 800 M dosage.The antioxidative efficiency of SOH might relate to its strong ability of scavenging free radical and chelate transition metal.Furthermore,SOH significantly enhanced interfacial barrier property and reduced permeation rate of peroxyl radical across emulsion interface by hydrogen bonds between sugar groups of saponin molecules and SOH.However,no obvious change in barrier property of emulsion was observed in SES.SOH improved physicochemical property of flaxseed oil-in-water emulsion with higher antioxidant activity and stronger interfacial barrier property,so that it could be serve as plant-based antioxidant in oil-in-water emulsion delivery system. 展开更多

Achieving the reuse of traditional egg by-products,salted duck egg whites(SEW),is an urgent problem to be solved.In this current work,we constructed a heat-induced gel-assisted desalination method for SEW.Subsequently,a top-down way was utilized to prepare desalted duck egg protein nanogels(DEPN)with uniformly distributed diameters and their application in the oil/water(O/W)interface system was explored.The results revealed that the increase of DEPN concentration could lower the droplet size,however,the size was negatively correlated with the oil phase fraction.Moreover,the effect of pH,ionic strength,and temperature on the emulsion stability demonstrated that the DEPN-stabilized emulsion displayed superior physical stability under different conditions.The addition of NaCl resulted in the significant decrease in droplet size of the emulsion,while further increasing the NaCl concentration,the droplet size did not decrease accordingly.Besides,heat-treatment and cold-treatment had little negative effect on the stability of the emulsion.Even if the droplet size of the emulsion increased at 80℃for 3 h,the morphology of the emulsion remained unchanged.Our study demonstrated DEPN had great potential as a stabilizer for food-grade Pickering emulsions. 展开更多

Accumulating data suggest that consuming dietary flaxseed oil(FSO)was a potential strategy for treating diet-induced lipid metabolism disorder(LMD).Effects of FSO on high-fat-diet(HFD)induced LMD and gut microbiota were studied in C57/BL6J mice.Results showed that FSO remarkably suppressed body weight gain induced by HFD and also attenuated LMD by decreasing levels of total cholesterol(TC),total triglyceride(TG),lowdensity lipoprotein cholesterol(LDL-C),non-esterified fatty acid(NEFA)and fasting bloodglucose(FBG)in serum.FSO treatment modulated mRNA expression level of genes associated with glucose and lipid metabolism.It regulated gut microbiome at different taxonomic levels by increasing proportions of beneficial Alistipes,Anaeroplasma,Bifidobacterium and inhibiting the growth of insulin resistance or obesity-associated bacteria such as Adlercreutzia,Dorea and Sporosarcina,compared with HFD group.Spearman's correlation analysis suggested that modulation of gut microbiota by FSO were closely related with LMD parameters.These findings might help us to better understand FSO impact on human health. 展开更多
