Influence of Production Factors on the Physico-Chemical Characteristics of Fermented Cassava Dough and Sensory Evaluation of Attieke

Attieke production remains a traditional activity carried out by less literate women. However, perceived differences in measurable factors and attieke qualities require an investigation of their influence on the characteristics of the pressed dough and attieke. The aim of this study is to improve the quality of the dough in relation to that of the attieke produced. The experiment was carried out on 4 production factors, namely the type of boiled or braised ferment, the incorporation rate of the ferment between 8 and 10%, the addition of oil from 0.1 to 1% and the fermentation time from 12 to 15 hours applied to the Improved African Cassava (IAC) variety. A complete experiment design of 16 samples of fermented dough and attieke was employed. These samples underwent physic-chemical analyses for the fermented dough and sensory evaluation for the attieke. It was found that, except for titratable acidity, reducing sugar content and ash content, the physico-chemical characteristics of the dough of IAC variety were significantly influenced by all production factors and their interaction. Fermentation time significantly influences 60% of the physico-chemical characteristics of the fermented dough. The type of ferment, the oil addition and the ferment rate have a significant influence at 40% of these characteristics. At the sensory level, color, acidity and grain binding with an explained variance of 34.60% were essential for the appreciation of the attieke samples. Thus, these production factors could be considered for the improvement of the fermented dough and attieke production process. 展开更多

Tea Production Response to Seasonal Rainfall Variability: Evidence from Rwanda

Tea is a very important cash crop in Rwanda, as it provides crucial income and employment for farmers in poor rural areas. From 2017 to 2020, this study was intended to determine the impact of seasonal rainfall on tea output in Rwanda while still considering temperature, plot size (land), and fertiliser for tea plantations in three of Rwanda’s western, southern, and northern provinces, western province with “Gisovu” and “Nyabihu”, southern with “Kitabi”, and northern with “Mulindi” tea company. The study tested the level of statistical significance of all considered variables in different formulation of panel data models to assess individual behaviour of independent variables that would affect tea production. According to this study, a positive change in rainfall of 1 mm will increase tea production by 0.215 percentage points of tons of fresh leaves. Rainfall is a statistically significant variable among all variables with a positive impact on tea output Qitin Rwanda’s Western, Southern, and Northern provinces. Rainfall availability favourably affects tea output and supports our claim. Therefore, there is a need for collaboration efforts towards developing sustainable adaptation and mitigation options against climate change, targeting tea farming and the government to ensure that tea policy reforms are targeted towards raising the competitiveness of Rwandan tea at local and global market. 展开更多

The product must meet the following desirable criteria: effectiveness, contamination free, stability, cost-effectiveness, and a prolonged shelf life. Controlling the drying process is crucial for ensuring the stability and durability of the product. The traditional approach, which involved mechanical and natural drying, led to decreased productivity and quality. The objective of this research endeavour was to achieve a dry process enhancement while preserving the microbial quality of Trichoderma asperellum (M103). The temperature and relative humidity during the drying period were monitored under two conditions: with and without a dehumidifier. The results demonstrate that the dehumidifier increases drying period efficiency by up to 63%. 展开更多

Development of a Functional Food Snack Product Utilizing Underexplored and Underutilized Ingredients: Spirulina Microalgae and Bilberry

Spirulina, a protein-rich cyanobacterium, and Bilberry, a dark berry, have the potential to be used as functional food ingredients in the food industry. These two underexplored and underutilized ingredients were used to develop an adolescent-friendly functional snack food product in the light of food industry trends. Stages of product development, shelf life/physiochemical analysis (texture, pH, color, and water activity) and sensory evaluation were utilized in developing a functional snack mini muffin containing Spirulina and Bilberry. Aqueous (AQ) and 80% ethanol (ET) extracts of mini muffin formulations (chocolate, 1% Spirulina (S) + 4% Bilberry (B), 2% Spirulina (S) + 8% Bilberry (B)) were prepared using a standard protocol. Antioxidant potential was determined using 2,2-diphenyl-1-picrylhydrazyl (DPPH) and Ferric Reducing Antioxidant Potential (FRAP) assays. Utilizing a 5-point hedonic scale (1—Dislike very much, 2—Dislike a little, 3—Neither like nor dislike, 4—Like a little, 5—Like very much), 3 mini muffin formulations (chocolate, 1% S + 4% B, 2% S +8% B), were tested among consumer panelists, with 1% S + 4% B being the most acceptable based on taste, texture, color, aroma, appearance, etc. Texture (post-peak (N) of the mini muffin did not vary between chocolate and 1 S% + 4% B formulations;however, 2% S + 8% B was 1.09 times higher compared to its counterparts. pH, color, and water activity remained constant over the 9-day shelf-life period. The Spirulina and Bilberry muffins developed exhibited antioxidant activities (highest in 2% S + 8% B), and were accepted by the sensory panelists for color, taste, mouthfeel, and aroma (panelists preferred 1% S + 4% B). 展开更多

Bovine tuberculosis is one of the zoonoses which has a very significant socio-economic importance due to the losses in agribusiness and hampers commercial exchange of animals and products. The present study highlights the risk of considerable potential economic and health impacts of this major zoonosis. It was carried out at the Bobo-Dioulasso slaughterhouse, in Burkina Faso over 3 years. A retrospective study was conducted based on bovine tuberculosis suspected carcass seizures during primary meat production between January 1st, 2020 and December 31st, 2022. The diagnosis and the criteria for suspecting bovine tuberculosis were addressed by post-mortem inspection. All carcasses were examined for tuberculosis lesions detection. All cattle slaughtered in the abattoir for primary meat production during the study period were included. Economic losses were determined from recorded seizure data and we included all the cattle slaughtered during the study period. Three thousand two hundred ten (3210) bovine carcasses were seized on a total of 180,827 cattle slaughteredwith a prevalence of 19.48%. Economic loss was estimated to be 53,505,000 F CFA, while the average quantity of animal protein lost was 4746 kg, 435 kg, and 13,445 kg for the carcass, livers, and lungs, respectively. The various results show a real health issue linked to exposure to M. bovis for agents and stakeholders in the primary meat production chain, processors and consumers. In addition, the survey conducted over the study period, reveals important material seized and destroyed. This leads to significant loss in rural agriculture and also in the primary meat production industry for the population. The figures are enormous and impact both the nutritional intake linked to animal protein consumption and the livelihood of the beef industry. The Burkinabe administration should invest in biosecurity and biosafety measures to minimize the risks of the disease and also provide compensation for losses recorded among breeders and butchers. 展开更多

Maize constitutes one of the most important crops in Niger’s fight for food security, and it is cultivated in all regions of the country. However, maize cultivation is declining due to low soil fertility. This study focused on evaluating the impact of fertilizers on maize plant production in Zinder. The fertilizer effect was evaluated based on 21 quantitative and 9 qualitative descriptors proposed by IBPGR and CIMMYT 1991. The experiment was conducted during the rainy season in the experimental domain of Université André Salifou following randomized complete block designs with three repetitions. Seven fertilizer treatments, including two organic, two mineral, two combinations of fertilizers, and a control treatment, were applied. The analysis shows that fertilizers had positive effects on the earliness and productivity of the selected variety. The best yield of dry corn cob (7480 kg/ha) was recorded on organic fertilizer of composted poultry manure, which is equal to 4.8 times that obtained with the control (1561 kg/ha), followed by the mineral fertilizer NPK combined with composted cow dung with 6395.231 kg/ha. Therefore, the use of fertilizers could be an appropriate alternative to overcome the negative consequences of yield declines in the corn production system in the Zinder region. 展开更多

Strawberry (Fragaria spp.) is one of the most important fruits classified as exotic fruits imported into Cameroon. To have an inventory of its cultivation in Cameroon, a survey study was carried out among eight farms of Fragaria spp. from January 2021 to February 2022. The plant was introduced in Cameroon in 2018. There are 13 varieties of Fragaria spp. currently cultivated. Among these 13 varieties, eleven are hybrids of Fragaria x ananassa (“Amiga”, “Amine”, “Camarosa”, “Chandler”, “Charlotte”, “Elsanta”, “Gariguette”, “Madame Moutot”, “Ostara”, “Ruby gem” and “San Andreas”), and two of the hybrids of Fragaria vesca (“Maestro” and “Mara des bois”). The cropping system, irrigation system, and type of fertilizers applied differ from one strawberry farm to another. Biofertilizers (such as mycorrhizal), inorganic and organic fertilizers are actually used to improve production. The potential annual production of strawberries from January 2021 to February 2022, estimated based on the survey data, was 21.216 tons for all growers. Among these eight production farms, the Lolodorf BIO Farm presents 6000 kg (six tons) of strawberries and 100,000 stolons (seedlings) produced, from seven varieties of Fragaria spp. cultivated, with 6 varieties which are hybrids variety Fragaria x ananassa (“Amiga”, “Amine”, “Chandler”, “Gariguette”, “Madame Moutot”, and “Ruby gem”), and one which is a hybrid of Fragaria vesca (“Mara des bois”). This present research work focuses on the valorization of pig droppings for production of biogas in mono digestion and co-digestion with proportions of cow dung from the urban commune of N’Zérékoré. It was carried out in December 2020 in the Physics laboratory of the University of N’Zérékoré. The anaerobic digestion process took 25 days in an almost constant ambient temperature of 25˚C. Five digesters were loaded on 12/06/2020, two of which with 1 kg of pig dung and 1 kg of cow dung both in mono-digestion. The 3 other digesters in co-digestion with different proportions of pig manure and cow dung. The substrate in each digester is diluted in 2 liters of water, with a proportion of (1/2). The main results obtained are: 1) the evolution of the temperature and pH during digestion process, 2) the average biogas productions 0.61 liters for (D1);1.20 liter for (D2);1.65 liter for (D3);1.51 liter for (D4) and 1.31 liter for (D5). The cumulative amounts of biogas are respectively: D1 (7.95 liters), D2 (15.60 liters), D3 (21.50 liters), D4 (19.65 liters) and D5 (17.05 liters). The total cumulative production is 81.75 liters at the end of the process. The originality of this research work is that the proposed model examines the relation between the daily biogas production and the variation of temperature, pH and pressure. The combustibility test showed the biogas produced during the first week was no combustible (contains less than 50% methane). Combustion started from the biogas produced from the 15th day and it is from the 20th day that a significant amount of stable yellow/blue flame was observed. The results of this study show the combination of pig manure and cow dung presents advantages for optimal biogas production. 展开更多

Timely decisions on farm practices such as farm preparation and planting are critical determinants of the seasonal outcomes. In Kenya, most small-scale farmers have no reliable source of information that would help them make timely and accurate decisions. County governments have extension officers who are mandated with giving farmers advisory services to farmers but they are not able to reach most farmers due to facilitation constraints. The mode and format of sharing information is also critical since it’s important to ensure that it’s timely, well-understood and usable. This study sought to assess access to geospatial derived and other crop production information by farmers in four selected counties of Kenya. Specific objectives were to determine the profile of small-scale farmers in terms of age, education and farm size;to determine the type of information that is made available to them by County and Sub-County extension officers including the format and mode of provision;and to determine if the information provided was useful in terms of accuracy, timeliness and adequacy. The results indicated that over 80% of the farmers were over 35 years of age and over 56% were male. Majority had attained primary education (34%) or secondary education (29%) and most farmers in all the counties grew maize (71%). Notably, fellow farmers were a source of information (71%) with the frequency of sharing information being mostly seasonal (37%) and when information was available (43%). Over 66% of interviewed farmers indicating that they faced challenges while using provided information. The results from the study are insightful and helpful in determining effective ways of providing farmers with useful information to ensure maximum benefits. 展开更多

The use of food additives in industrial production has the advantage of improving sensory properties, technological quality and extending the shelf life of foods. Among the most widely used additives are antioxidants, which prevent oxidation, browning and rancidity reactions in foods. However, the strong presence of these additives on the market is not without risks for human health, and should be controlled to guarantee food safety. Analysis of the risks associated with consumption of foods containing these additives requires, among other things, information on the frequency of use of these additives in various consumer products. The aim of this study is therefore to identify the antioxidants present in industrial food products distributed in Dakar. The methodology adopted consists of a qualitative analysis based on the identification of additives from food labels. Investigations were carried out in 9 stores, 4 superettes and 2 supermarkets located in different districts of Dakar. The results revealed the presence of 12 antioxidant additives, dominated by citric acid (53%) and ascorbic acid (29%). These studies have also highlighted the simultaneous use of several antioxidants in the same food product. Moreover, for some artificial antioxidants identified antioxydant such as BHA and BHT, health risks are associated with their consumption. The results of this study open up prospects for the development of information databases on food additives. 展开更多

The Impacts and Causes of Land Fragmentation on Farm Productivity: Case Review of East African Countries

This report provides an overall assessment of land fragmentation problems in East Africa. Many parts of East Africa have become highly fragmented, putting development systems and activities in these areas at risk of complete collapse. Land fragmentation occurs when land gets converted for agriculture, industrialization, or urbanization, invaded by non-local plants, or enclosed for individual use and by subdividing farmlands into subsequent smaller units called parcels with varying average farm sizes. Fragmentation results from inappropriate agricultural development processes and ineffective land use planning that fails to recognize how farmland is used, and the importance of its interconnected areas. Insecurity of tenure and resource rights are key factors in making this possible. Land fragmentation is one of the key reasons why the ability of most resources in East Africa becomes scarcer, and those remaining become “privatized” by more powerful community members—keen to maintain their access to them. Such individualistic attitudes are new and disadvantage the poorest even further by affecting the traditional customary safety nets and agricultural outputs. Neither the government nor customary governance systems effectively protect resource access for the poorest. This review summary report identifies the key causes, measures, and implications, government interventions, and the common remedies to land fragmentation problems in the East African Countries of Kenya, Uganda, Rwanda, and Tanzania including neighboring Ethiopia, and the Sudan. The findings indicated from 2005 to 2015, the population kept increasing for all the named countries in East Africa with Rwanda and Uganda having a substantial increase in population density. The study review further explores the trend in the performance of agriculture by average farm sizes within the intervals of five years by highlighting their strong linkages and found that the average farm size has declined drastically, especially for Kenya. This can only mean that small farms kept becoming smaller and smaller and that there were more small-scale farmers. The results further depicted that the major and commonly cultivated food crops among the East African countries include maize, sorghum, rice, cassava, sweet potatoes, bananas, Irish potatoes, beans, peas, etc., with maize yields (Mt/ha) in 2003 for Uganda being the highest (1.79 Mt/ha) and the lowest in Rwanda (0.77 Mt/ha) respectively. Therefore, from the review results, recommendations are being made as to how the negative impacts of land fragmentation on agricultural productivity can be reduced or mitigated. One way is by community sensitization and awareness about the importance of land consolidation and its proposition on farm productivity. 展开更多

Software and Mobile Apps as a Strategy for Productivity Improvement in the Construction Industry

The construction industry, known for its low productivity, is increasingly utilising software and mobile apps to enhance efficiency. However, more comprehensive research is needed to understand the effectiveness of these technology applications. The PRISMA principles utilised a scoping review methodology to ascertain pertinent studies and extract significant findings. From 2013 onwards, articles containing data on mobile applications or software designed to enhance productivity in the construction sector were obtained from multiple databases, including Emerald Insight, Science Direct, IEEE Xplore, and Google Scholar. After evaluating 2604 articles, 30 were determined to be pertinent to the study and were subsequently analysed for the review. The review identified five key themes: effectiveness, benefits, successful implementation examples, obstacles and limitations, and a comprehensive list of software and mobile apps. In addition, 71 software and mobile apps have shown potentially how these technologies can improve communication, collaboration, project management, real-time collaboration, document management, and on-the-go project information and estimating processes in the construction industry, increasing efficiency and productivity. The findings highlight the potential of these technologies such as Automation, Radio-Frequency Identification (RFID), Building Information Modeling (BIM), Augmented Reality (AR), Virtual Reality (VR), and Internet of Things (IoT) to improve efficiency and communication in the construction industry. Despite challenges such as cost, lack of awareness, resistance to change, compatibility concerns, human resources, technological and security concerns and licensing issues, the study identifies specific mobile applications and software with the potential to enhance efficiency significantly, improve productivity and streamline workflows. The broader societal impacts of construction software and mobile app development include increased efficiency, job creation, and sustainability. 展开更多
