With 94 spring wheat cultivars as experimental materials, the correlations between the content of resistant starch (RS) in uncooked flour and cooked flour, and the apparent amylose content (AAC), protein, lipid were investigated. The results showed that RS contents in both the uncooked flour and cooked flour assumed significantly positive correlation with AAC, and significantly negative cor- relation with protein content; and they were proved to be not significantly correlated with lipid content. RS content in uncooked flour was significantly correlated with that in cooked flour. These results provided references for the genetic improvement of wheat cultivars. 展开更多

The classification and inheritance of rice starch RVA profiles were studied by testing RVA profiles of F2 clonally propagated population and some varieties, including japonica, indica, and glutinous types. All the RVA profiles of accessions could be divided into six kinds based on the cluster analysis, that is A, B, C, D, E and F. Feature profile of sticky variety was type A. The profiles of indica varieties could be presented as B, C, D, E and F types and that of japonica varieties fell into D, E and F types.RVA profiles of the rice were mainly affected by apparent amylose content (AAC), but the difference of RVA profiles could also be detected in the varieties with similar AAC. The close relationship between RVA profile indices and sensory of low or middle AAC varieties suggested that the RVA profiles can be used as indirect index to evaluate eating and cooking quality. In four hybrid combinations, the component indices of RVA profiles of F1 were between those of its parents except peak viscosity and pasting temperature. Also, in F2 clonally propagated population, all the components of the RVA profiles showed continuous segregation, suggesting that all of them were controlled by a series of minor genes, although Wx gene may play an important role in determining the RVA profiles. These results may provide some new information useful for rice quality breeding program. 展开更多

Strong aroma, good taste and its elongation during cooking are the key characteristics of PSM rice. Thirty-one PSM accessions were genotypically characterized, and their physical grain and cooking quality traits were studied. We used specific gene markers associated with aroma, apparent amylose content (AAC) and alkali spreading value to determine the alleles carried by different PSM accessions. The results revealed that six PSM accessions (PSM10, PSM12, PSM13, PSM21, PSM22 and PSM30) had a 3-bp insertion in Os2AP gene. Gel consistency (GC) allele was predominant among the PSM accessions for gelatinization temperature (GT), however, the phenotype observed was between low and intermediate GT because of the combination of the GC allele with the presence of low GT allele at heterozygous state from the other loci of the SSIla gene. Intermediate to high AAC was observed among the PSM accessions corresponding to the haplotype identified for the single nucleotide polymorphism G/T and the (Cm)n repeat in the Wx gene. The characterization and grouping data of PSM accessions posted benefits to Myanmar seed banks, and our results will help in maintaining the integrity of PSM rice variety. 展开更多
