Identification of Antioxidant Additives in Food Products Sold in Dakar Markets

The use of food additives in industrial production has the advantage of improving sensory properties, technological quality and extending the shelf life of foods. Among the most widely used additives are antioxidants, which prevent oxidation, browning and rancidity reactions in foods. However, the strong presence of these additives on the market is not without risks for human health, and should be controlled to guarantee food safety. Analysis of the risks associated with consumption of foods containing these additives requires, among other things, information on the frequency of use of these additives in various consumer products. The aim of this study is therefore to identify the antioxidants present in industrial food products distributed in Dakar. The methodology adopted consists of a qualitative analysis based on the identification of additives from food labels. Investigations were carried out in 9 stores, 4 superettes and 2 supermarkets located in different districts of Dakar. The results revealed the presence of 12 antioxidant additives, dominated by citric acid (53%) and ascorbic acid (29%). These studies have also highlighted the simultaneous use of several antioxidants in the same food product. Moreover, for some artificial antioxidants identified antioxydant such as BHA and BHT, health risks are associated with their consumption. The results of this study open up prospects for the development of information databases on food additives. 展开更多

An important way to address global food security is to make better use of the food already produced. Since at least one third of global food is wasted before consumption, there are enormous incentives to cut this waste and create a more sustainable food system. This paper focuses upon saving food loss at the supermarket level in the US and channeling this food stream in new and efficient ways to those in hunger. A more comprehensive Food System-Sensitive Methodology has been used to pilot and evaluate a surplus food management program that diverts culled fresh fruits and vegetables from grocery stores that would otherwise be disposed of in landfills. Instead, produce is processed for donation or for new businesses. Nearly 35,000 pounds of produce was culled from a grocery store chain in Philadelphia. Twenty-five percent of this was not suitable for culinary uses, ten percent consisted of relatively small quantities of food that did not warrant further research, and about 33 percent is suitable for use at area food shelters and pantries. An experimental sample taken from the remaining 15,000 pounds was used for recipe research and development for diversion to new commercial enterprises. We analyzed a scenario where a supermarket receives $0.25 per pound for culled produce, generating about $8700 dollars in average monthly revenue while eliminating disposal costs. New commercial possibilities for the unused food were then explored. The scenario included community-based enterprises that could process the produce into value-added products that could be wholesaled back to the store at sufficient profits to support 2 - 4 community employees. Extrapolating these results to the approximately 38,000 large supermarkets in the United States suggests that much of the 1,100,000,000 pounds of produce that is currently sent to landfills can be repurposed. If diverted to new foods each of the 46.1 million SNAP recipients could figuratively receive an equivalent of 24 pounds of fruit and vegetable products per annum. This initial analysis suggests that repurposing surplus produce from supermarket discards can have significant beneficial outcomes for new food markets and the environment. 展开更多

Nowadays, African cities are subjected to upsets which result from the extraordinary growth of urban populations. The growth of the population of cities has induced some changes in the structure of the activity of those cities. Agriculture which was formerly confined to the countryside henceforth develops in the urban area and occupies a preponderant place as a strategy of survival, of insertion and of food supplying of the city-dwellers. It has become an activity integrated to the urban tissue through systems of occupying and exploitation of land in the urban area. Population growth (4.81%) between 2002 and 2013 is a critical poverty rate (65%) of the population of Parakou city, entailing a misery perceptible in all its social and economic dimensions. The market-gardening activity has integrated itself to the urban tissue. The objective of this study is to understand how urban agriculture through market-gardening can be a solution for rural farmers who have moved to Parakou city. In this study, documentary research, interviews and field observation are used for data collection. The main results to be signaled among others are: evolution and status of the market-gardening areas in Parakou, the reduction of food insecurity with the permanent availability in quantity and in quality of market-gardening products accessible to the population: the protection of the environment through the drainage of the urban area and the preservation of the diversity of vegetables;the increase of the income of the households of the farmers and the creation of employments. 展开更多

This paper develops a moderated mediation model in which the interactive effects of food traceability and environmental dynamism on firm performance are mediated by the core capabilities(operating capabilities and marketing capabilities)in food supply chain context, by invoking the indirect view of organizational learning theory. Our hypotheses were tested using hierarchical regression and bootstrapping methods with a sample of 216 food manufacturing firms in China, and a survey-based, two-informant design was used to collect data. The results revealed that operating and marketing capabilities fully mediate the food traceability-performance link. In addition, environmental dynamism positively moderates the food traceability-core capabilities link. Moreover, it is found that operating and marketing capabilities transform the interactive impacts of environmental dynamism and food traceability into firm performance. Our study offers a fine-grained picture of the essential food traceability-performance link by revealing for the first time that there is an interactive impacts of food traceability and environmental dynamism on firm performance via core capabilities. 展开更多

With the rapid growth of China's economy, rising demand for safety food has been accompanied by frequent food safety scandals. Given that China's farming is dominated by millions of small-scale farms, ensuring food safety is a major challenge facing the public and private sectors. The direct farm (DF) program, initiated in 2008, represents one of the government's major initiatives to modernize the distribution of fresh fruit and vegetables (FFV) and improve food safety. Under the DF program, participating national and international retailers are expected to establish more direct procurement relationships with farm communities. While it is often claimed that greater participation by retailers in the production and post-harvest processing implied the DF program will lead to improved quality, safety and traceability, systematic evidence remains elu- sive as existing studies are largely narrative, based on case studies, or theoretical inference. Little empirical evidence is available for a broader evaluation of the DF program. This paper aims to fill this gap by assessing the overall performance of a single retailer's DF experience with respect to the procurement and food safety of FFV. We use data from a survey of production managers of 35 DF production bases (PBs) spread across 11 provinces, 3 cities and 1 autonomous region in China. The results show a mixture of opportunities and challenges. On one hand, the DF program improves production practices and distribution channels of FFV produced on its PBs, thus facilitating the move of China's food system towards improved food safety compliance. On the other hand, significant heterogeneity in the traceability of food and the ability of DF to meet higher safety standards is evident both across major product categories and across household-operated vs. firm-operated PBs. Celiac Disease (CD) is an inherited, autoimmune disorder in which proteins from the grains wheat, rye and barley (collectively called gluten) damage the small intestine. The only treatment for CD is a strict, lifelong gluten-free diet. With a prevalence rate of about one in 100-133 people worldwide. Celiac disease is wide-spread across the globe. Unlike traditional allergies, which cause immediate reactions, gluten sensitivity is harder to pin down since it manifests gradually and in various forms like headaches, stomach cramps, bloating, anxiety, and depression. Due to complicated diagnosis procedure and lack of awareness, many cases are either misdiagnosed or not at all diagnosed in India and USA. In spite of high growth, gluten-free foods are facing problems to grain ground in Asian market, due to high price, lack of awareness about the products, large number of un-diagnosed cases and inefficient value chain for gluten-free products. One of the major issues in India and USA is very high prices of gluten-free foods as compared to regular food products. Globally, the market potential of gluten free products is estimated to be USD 4639.13 Million and USD 7594.43 Million in 2015 and 2020 respectively. The global gluten free food market is projected to grow with a CAGR between 9 percent and 10.2 percent during 2016-2022. The study on consumer preference of gluten-free foods would enable manufacturers of gluten-free foods to understand the current and evolving expectations of consumers and to design the products according. Study of two countries i.e., India and USA would enable manufacturers to understand the difference in choices and preferences related to gluten-free foods for both the nations. This study would help manufacturers of alternative wheat product to form the concrete marketing and product development strategy based on recent consumer behavior trends. 展开更多

次优食品是存在缺陷但可安全食用的食品,次优食品的商业化成为减少食物浪费的重要策略。然而,次优食品营销干预策略有效性的实验结果存在分歧。本研究通过元分析方法整合了目前次优食品营销干预策略的实证研究,分析了认知导向和情感导... 次优食品是存在缺陷但可安全食用的食品,次优食品的商业化成为减少食物浪费的重要策略。然而,次优食品营销干预策略有效性的实验结果存在分歧。本研究通过元分析方法整合了目前次优食品营销干预策略的实证研究,分析了认知导向和情感导向营销干预策略对消费者次优食品评价和购买的有效性,并探索了营销干预策略有效性的边界条件。研究纳入符合要求的原始文献32篇(57个独立样本),共94个效应量。结果发现,认知导向和情感导向营销干预策略能有效促进消费者对次优食品的积极评价和购买意愿,具有接近中等强度的有效性,且情感导向营销干预策略的效果优于认知导向营销干预策略。此外,次优食品特征、营销特征和顾客特征等因素调节次优食品营销干预策略的有效性。本研究发现为食品相关企业营销部门和政府部门提供了管理启示。 展开更多

中国式现代化下的粮食安全是以人民为中心的普遍安全,中国式粮食安全政策是基于人类社会现代化的一般规律和中国特色实践的演化结果。基于此,构建国家粮食安全政策演化的理论逻辑,运用政策文本工具,系统检视我国粮食安全政策演化的结构... 中国式现代化下的粮食安全是以人民为中心的普遍安全,中国式粮食安全政策是基于人类社会现代化的一般规律和中国特色实践的演化结果。基于此,构建国家粮食安全政策演化的理论逻辑,运用政策文本工具,系统检视我国粮食安全政策演化的结构特征与路径特征。结果表明:第一,伴随着现代化演进,国家粮食安全政策从“保供稳产”配置政策逐步演化到促进粮食产业可持续发展“五维”结构政策,遵循着粮食安全与发展的辩证统一规律,蕴含着粮食安全政策演化的行为逻辑和功能逻辑。第二,中国式现代化下的粮食安全配置型政策数量呈边际递减,补偿型政策数量呈边际常量,激励型、再生型与永续型等政策数量呈边际递增,表明国家粮食安全政策演化具有从粮食市场安全到粮食产业安全的路径转型特征。因此,全面推进中国式现代化强国建设,必须遵循国家粮食安全政策演化特征规律,推动国家粮食安全体系与能力现代化建设的匹配政策改革,实现国家粮食安全保障更高质量更高水平战略目标。 展开更多

2022年2月俄乌冲突爆发,加剧全球粮食供给偏紧局面,引发全球关切。为促进全球粮食安全,缓解两国经济困境,2022年7月规定两国可通过安全的海上人道主义走廊出口粮食和肥料的黑海粮食协议签订,但由于双方在协议的内容和执行上存在分歧,202... 2022年2月俄乌冲突爆发,加剧全球粮食供给偏紧局面,引发全球关切。为促进全球粮食安全,缓解两国经济困境,2022年7月规定两国可通过安全的海上人道主义走廊出口粮食和肥料的黑海粮食协议签订,但由于双方在协议的内容和执行上存在分歧,2023年7月黑海粮食协议中断。本文从“俄乌冲突爆发—黑海粮食协议签订—黑海粮食协议中断”的动态变化过程着手,构建了“黑海粮食协议的主要内容和角色—黑海粮食协议中断对各方的影响”对比性研究框架,分析黑海粮食协议执行期间粮食外运规模、出口分布,继而研究黑海粮食协议中断对全球和中国粮食市场的影响。研究发现,乌克兰共通过黑海粮食走廊出口粮食3 285.60万吨,对改善全球粮食供应紧张起到积极作用,但对保障世界最贫穷国家和低收入人群的粮食需求作用不足;同时,协议期间乌克兰收益增加但俄罗斯的权益未得到满足。黑海粮食协议中断使得全球粮食供给回到俄乌冲突爆发之初,引发部分国家出口限制,造成供应进一步短缺,但相对于2022年俄乌冲突爆发之际,黑海粮食协议中断引发的市场价格波动更为缓和,粮食市场对此有所准备。为防范国际市场供给异动对中国的不良影响,中国作为粮食消费和进口大国,需未雨绸缪,坚持底线思维,持续完善粮食安全保障体系,提高全球粮食供应链韧性,将粮食安全的主动权掌握在自己手中。 展开更多

为探究粮食产销平衡区耕地非粮化率时空分异,识别其驱动类型,本研究采用空间自相关模型对2005—2020年山西省耕地非粮化率时空演变特征进行分析,利用随机森林模型分析耕地非粮化率影响因素,利用主成分分析法和K-Means聚类法探究山西省... 为探究粮食产销平衡区耕地非粮化率时空分异,识别其驱动类型,本研究采用空间自相关模型对2005—2020年山西省耕地非粮化率时空演变特征进行分析,利用随机森林模型分析耕地非粮化率影响因素,利用主成分分析法和K-Means聚类法探究山西省耕地非粮化驱动类型。结果表明:从时间上看,耕地非粮化率由2005年的50.21%下降到2020年的40.05%,呈“W”型波动,超过山西省粮食安全阈值11.45个百分点;从空间上看,耕地非粮化率差异显著,呈现西北高、东南低的分布格局;从空间集聚类型上看,2005—2020年山西省耕地非粮化率全局莫兰指数先下降后上升,空间集聚效应加强,主要以高高集聚和低低集聚为主。土地生产率、年降水量、各县到省会中心的距离对耕地非粮化率变化起主要作用,且均与耕地非粮化率呈负相关。山西省耕地非粮化驱动类型主要分为资源禀赋型、交通便利型、农业支持型和经济作物增长型。识别山西省耕地非粮化驱动类型,制定针对性的管控措施,对于保护农业发展和粮食安全具有重要的理论和现实意义。 展开更多

种业是现代农业的“芯片”,是国家基础性、战略性产业,也是我国积极应对百年变局、加快建设农业强国的重要举措。党的二十大报告和2024年中央一号文件明确指出,要深入实施并加快推进种业振兴行动。本文首先系统梳理了我国种业的发展历... 种业是现代农业的“芯片”,是国家基础性、战略性产业,也是我国积极应对百年变局、加快建设农业强国的重要举措。党的二十大报告和2024年中央一号文件明确指出,要深入实施并加快推进种业振兴行动。本文首先系统梳理了我国种业的发展历程、现状及趋势;其次识别分析了种业振兴的金融需求特点与我国财政金融服务种业发展现状,横向对比了国际上支持种业发展的做法与经验。在此基础上,本文提出种业振兴破局之路:坚持加强顶层设计与“摸着石头过河”相结合,加强财政金融协同配合,增强对种业核心科技的支持;为优势种企做大做强提供多渠道高质量精准金融服务;引导商业银行错位竞争,对不同规模的种企提供科技金融、普惠金融、绿色金融与数字金融服务等方面的差异化服务;加强配套政策支持,建立健全种业市场价值评估与风险分担机制。 展开更多
