An experiment was conducted to investigate the effect of different initial pH on the storage characteristics and shelf life of liquid diet. 45 polypropylene bags were allotted to treatments 1, 2 and 3 on average, 100 ...An experiment was conducted to investigate the effect of different initial pH on the storage characteristics and shelf life of liquid diet. 45 polypropylene bags were allotted to treatments 1, 2 and 3 on average, 100 g diet and 200 g water were placed into each polypropylene bag, food-grade DL-lactic acid was added to each bag at a rate of 0.0 mL in treatment l, 1.2 mL in treatment 2 and 4.7 mL in treatment 3, air was artificially expelled from each bag prior to heat-sealing. All bags were placed into a cage, cooked with steam at 90~C for 30 rain under normal pressure, then taken out and stored from day 0 to 60 at room temperature. Results indicated that liquid diet in treatment 3 achieved the highest total sensory scores, the pH value had a tendency to decrease and the bacteria count had a tendency to increase in the liquid diet with the advancing of storage time with the advancing of storage time, lowering the initial pH of liquid diet decreased the bacteria count, the AFBl and ZEN concentrations and increased the starch gelatinization degree from day 30 to 60, liquid diet in treatment 3 had a lower (P〈0.01) bacteria count and a higher (P〈0.05) starch gelatinization degree at day 30 and 45 than liquid diet in treatment 1. In conclusion, lowering the initial pH of liquid diet with lactic acid to pH 4 could effectively improve the storage characteristics and shelf life of liquid diet.展开更多

Metabolites produced at different fermentation time points should be one of the most important contributors. However, currently no literatures about differential metabolites of fermented liquid diet are reported. The aim of this experiment was to explore the difference of metabolites in a fermented liquid diet between different fermentation time intervals. A total of eighteen samples that collected from Bacillus subtilis fermented liquid diet on days 7, 21 and 35 respectively were used for the identification of metabolites by gas chromatography time of flight mass spectrometry(GCTOF-MS). Fifteen differential metabolites including melibiose, sortitol, ribose, cellobiose, maltotriose,sorbose, iso maltose, maltose, fructose, D-glycerol-1-phosphate, 4-aminobutyric acid, beta-alanine, tyrosine, pyruvic acid and pantothenic acid were identified between 7-d samples and 21-d samples. The relative level of melibiose, ribose, maltotriose, D-glycerol-1-phosphate, tyrosine and pyruvic acid in samples collected on day 21 was significantly higher than that in samples collected on day 7(P < 0.01),respectively. Eight differential metabolites including ribose, sorbose, galactinol, cellobiose, pyruvic acid,galactonic acid, pantothenic acid and guanosine were found between 21-d samples and 35-d samples.Samples collected on day 35 had a higher relative level of ribose than that in samples collected on day 21(P < 0.01), In conclusion, many differential metabolites which have important effects on the growth and health of pigs are identified and findings contribute to explain the difference in feeding response of fermented liquid diet.展开更多
