本文报道了4个新商品种和1个栽培种豌豆对IQF(单体快速冻结)适合性的评价。评价了鲜豌豆、加工后冻豌豆及在—20℃贮藏6个月后冻豌豆的干物质、pH、酸度、糖、醇不溶物(A.I.S),果胶质、叶绿素、脱镁叶绿素及其坚实度、颜色和感官的客观... 本文报道了4个新商品种和1个栽培种豌豆对IQF(单体快速冻结)适合性的评价。评价了鲜豌豆、加工后冻豌豆及在—20℃贮藏6个月后冻豌豆的干物质、pH、酸度、糖、醇不溶物(A.I.S),果胶质、叶绿素、脱镁叶绿素及其坚实度、颜色和感官的客观量度。结果表明烫漂和冻结主要引起干物质、酸度和糖含量的降低;叶绿素的脱镁叶绿素化程度很小,因此颜色是稳定的,可通过客观量度和感官评价证实;在—20℃贮藏6个月后化学成分变化不大;冻结后与贮藏6个月后,豌豆的颜色、风味,质构和外形的感官特性是可接受的,只有种皮的感受性被评定为稍差;在加工和贮藏期间栽培种的情况大致相同。 展开更多

An assessment of the implications of the results for the farm to mill supply chain in China will also be made. Chinese wool is heterogeneous and requires sorting at the mill. Sorting teams appear to be able to reliably sort the wool into a number of count grades although they largely base their decision on crimp characteristics. There is scope for implementing more objective measurement in the mill but the long-term priority is to produce more uniform lines at the farm level to allow mills to match their purchases of input material to the products their customers demand. 展开更多

In this paper, the mechanism of fabric-evoked prickle is discussed, which indicates that the mechanical stimuli aroused by the fiber ends on the fabric surface to the skin-sensory receptors are responsible for prickle. The factors influencing the intensity of prickle are specialized and anatomized. Several means of sense estimate, including the corresponding statistical measures, are described. A few groping objective methods of evaluating prickle are analyzed, including the testing principles, the advantages and the disadvantages. At last, a new concept is proposed on the objective evaluation of prickle. 展开更多
