目的 了解四川居民的膳食结构 ,为制订营养规划提供参考。方法 抽样方法为分层整群抽样法。住户调查为称重三日记帐法 ,个体调查为 2 4h询问加登记法 ,与住户调查同时进行。结果 居民食物消费发生了较大变化。日常饮用水中纯净水、... 目的 了解四川居民的膳食结构 ,为制订营养规划提供参考。方法 抽样方法为分层整群抽样法。住户调查为称重三日记帐法 ,个体调查为 2 4h询问加登记法 ,与住户调查同时进行。结果 居民食物消费发生了较大变化。日常饮用水中纯净水、瓶装水的比例上升 ,蔬菜消费提升到第二位 ,种类明显增多 ;调味品消费较高 (排第五位 ) ;肉类消费量有所上升 ;谷类消费中仍以大米为主 ,但是豆类、乳类、蛋类、水产品消费较少。结论 我们应增加奶、蛋、水产品的消费 ,多吃蔬菜与薯类 ,少饮酒 ,少吃腌腊食品 ,改善人群膳食结构 。 展开更多

Dietary lipid and gross energy affect protein utilization in the rare minnow Gobiocypris rarus 被引量:2

An 8-week feeding trial was conducted to detect the optimal dietary protein and energy, as well as the ef fects of protein to energy ratio on growth, for the rare minnow( Gobiocypris rarus), which are critical to nutrition standardization for model fi sh. Twenty-four diets were formulated to contain three gross energy(10, 12.5, 15 kJ/g), four protein(20%, 25%, 30%, 35%), and two lipid levels(3%, 6%). The results showed that optimal dietary E/P was 41.7–50 kJ/g for maximum growth in juvenile rare minnows at 6% dietary crude lipid. At 3% dietary lipid, specifi c growth rate(SGR) increased markedly when E/P decreased from 62.5 kJ/g to 35.7 kJ/g and gross energy was 12.5 kJ/g, and from 75 kJ/g to 42.9 kJ/g when gross energy was 15.0 kJ/g. The optimal gross energy was estimated at 12.5 kJ /g and excess energy decreased food intake and growth. Dietary lipid exhibited an apparent protein-sparing eff ect. Optimal protein decreased from 35% to 25%–30% with an increase in dietary lipid from 3% to 6% without adversely ef fecting growth. Dietary lipid level af fects the optimal dietary E/P ratio. In conclusion, recommended dietary protein and energy for rare minnow are 20%–35% and 10–12.5 k J/g, respectively. 展开更多

The survey's results showed a significant percentage of women and especially men having an above normal cholesterol. In order to help reduce excessive rate of blood cholesterol, we used a local strain of Spirulina (Tamanrasset, in south of Algeria) associated with probiotic bacteria (Bf adolescentis). Experiments in vitro showed a significant degradation of total cholesterol by the combination of Spirulina and Bf adolescentis (74.5%) after 72 hours incubation at 37 ~C. A cholesterol is added to the standard diet mice in order to increase the total cholesterol for three lots. However, the rates of total cholesterol in mice receiving lower fermented milk with Bf adolescentis enriched by dry Spirulina. This shows that the decrease of cholesterol rate is closely related to the presence of Bf adolescentis and Spirulina. In vitro and in vivo results show, however, that it is possible to obtain a natural product (Spirulina) and a pseudo-strain lactic (Bf adolescentis) and to participate in the prevention of cardiovascular disease risk factor whose hand is cholesterol. 展开更多

This article discusses what we know about some of the main food safety risks in China. The focus is on role of the China Total Diet Study(TDS) as a tool for food safety risk assessment and the selection of priorities for monitoring. We compare the strengths and weaknesses of the TDS with those of two other major sources of information about food safety and nutrition: the National Food Safety Contamination Monitoring Network(FSCN) and the China Health and Nutrition Survey(CHNS), showing how the different methods they use produce different but complementary information. We then use an analysis of lead, cadmium and pesticide residues to demonstrate that, despite its shortcomings, the TDS provides the most reliable source of information about the actual dietary intake of harmful substances. 展开更多
