Antioxidants can act as metal chelators and free radical or oxygen scavengers, which can slow the progression of lipid oxidation. Lipid oxidation may have negative effects on the quality of meat and meat products, causing changes in sensory attributes such as color, texture, odor and flavor, and nutritional quality. Several synthetic antioxidants have been used to successfully prevent lipid oxidation in the meat industry, but consumers are concerned about the health risks related to consumption of some synthetic antioxidants. Therefore, there has been a growing interest in natural antioxidants. Nowadays, compounds obtained from natural sources such as grains, oilseeds, spices, fruit and vegetables have been investigated to decrease the lipid oxidation. In this review, the potential effects of natural antioxidants were evaluated that are widely used in meat and meat products.展开更多

We report a broad study of structural and electronic properties of boron antimonide (BSb), aluminium antimonide (AlSb), gallium antimonide (GaSb) and indium antimonide (InSb) in zineblende phase based on density functional theory (DFT). Our calculations are based on Full-PotentiM Lineaxized Augmented Plane wave plus local orbitals (FP- L(APWq-lo)) method. Different forms of exchange-correlation energy functional and corresponding potential are employed for structural and electronic properties. Our computed results for lattice parameters, bulk moduli, their pressure derivatives, and cohesive energy are consistent with the available experimental data. Boron antimonide is found to be the hardest compound of this group. For band structure calculations, in addition to LDA and GGA, we used GGA-EV, an approximation employed by Engel and Vosko. The band gap results with GGA-EV are of significant improvement over the earlier work.展开更多

Synthetic antioxidants have been used as food additives to retard lipid oxidation and development of off-flavor for over 50 years. However, the literature has expressed safety concerns and health risks (toxic and carcinogenic effects) associated with the use of synthetic antioxidants recently. Natural antioxidative substances from the polyphenols of edible plants are believed to be safer and may provide with additional health benefits and more effective compared to synthetic antioxidants. Due to the fact that natural antioxidants are additives that people mixed with food and consumed for centuries, they are known to be safe by the consumer. Therefore, it is an area worth to investigate due to consumer concerns about health. In the literature, there are many studies showing that the natural antioxidants have important antioxidant effect. Plants (oil seeds, cereals, vegetables, fruits, herb and spices), compounds from animal source (peptides and amino acids), enzymes and some microorganisms are important natural antioxidants. Plant extracts have been widely used to retard lipid oxidation in foods during frying and accelerated storage processes. They were found as strong antioxidant sources due to their high contents of phenolic compounds. There are countless studies about natural antioxidants. However, they have not been investigated completely by means of toxicology.展开更多

It was a meal made from barley flour and milk. The high antioxidant Talbina was formulated from whole flour of harley and oat, milk, date palm syrup (debis) and date palm seeds. The chemical composition, organoleptic properties and antioxidant activity of high antioxidant Talbina were determined. Sensory evaluation of traditional and high antioxidant Talbina showed that the developed product Talbina was considered as good for overall acceptability of all panelists. Also, the formulated Talbina contains high values of antioxidants components and natural nutrients. The antioxidant activity of formulated Talbina containing barley or oat may be due to presence of phenolic compounds and proanthocyanidins in the barley and oat. Increasing the antioxidant activity of high antioxidant Talbina containing barley and oat may be due to the adding of dates palm seeds which contain very high values of phenolic compounds and other antioxidants components. Date palm seeds as well as barley and/or oat give high antioxidants components which protect cells from oxidative stress and help to reduce the risk of cancer and heart disease as well as natural anti-depressant. Moreover, increasing the antioxidant activity in the formulated Talbina may play a role for reducing power, radical scavenging activity and the lipid peroxidation inhibition. In conclusion, supplementation of traditional Talbina containing barley and/or oat with date palm syrup (debis) and date palm seeds can produce simple and healthy meal to provide a good source of daily dietary antioxidants and micronutrients.展开更多

In this study, we successfully produced an important antioxidant dipeptide precursor, BOC-Tyr-Ala, via a kinetically controlled enzymatic peptide synthesis reaction, catalyzed by the recombinant car- boxypeptidase Y (CPY) expressed in P. pastoris GS 115. In this reaction, the enzyme activity was 95.043 U/mL, and we used t-butyloxycarbonyl-L-tyrosine-methyl ester (BOC-Tyr-OMe) as the acyl donor and L-alanine (L-Ala) was the amino donor. We optimized the reaction conditions to be: 30 ℃, pH 9.5, organic phase (methanol)/aqueous phase = 1:20, BOC-Tyr-OMe 0.05 mol/L, Ala 0.5 mol/L, and a reaction time of 12 h. Under these conditions, the dipeptide yield reached 49.84%. Then, we established the kinetic model of the synthesis reaction in the form of Michaelis-Menten equation according to the con-centration-time curve during the process and the transpeptidation mechanism. We calculated the apparent Michaelis constant K^(app)mand the apparent maximum reaction rate r^(app)max to be 2.9946 x 10^-2 mol/L and 2.0406 x 10.2 mmol/(mL h), respectively.展开更多

Antioxidants are used to minimize oxidation process. There is a growing interest in the substitution of synthetic food antioxidants by natural ones from vegetable sources. In meat industry, sodium erythorbate is antioxidant that is usually used and is an example of chemical antioxidant. Effect of olive leaf extract rich in olenropein on the quality of frozen hamburger was investigated. The objective of this study was to evaluate the usage of oleuropein from olive leaf extract as natural antioxidant in frozen hamburger stored at -12 ℃ compared with sodium erythorbate. Results suggested that olive leaf extracts might be useful to the meat industry as an efficient alternative to synthetic antioxidants by retarding oxidation of hamburger compared with sodium erythorbate 0.5% of olenropein and 0.5% of sodium erythorbate are the best concentrations to be used in frozen hamburger.展开更多
