物料含水率对大豆蛋白挤压产品组织化质量的影响

【目的】探讨水分对大豆蛋白挤压产品组织化质量的影响,为大豆蛋白模拟肉产品的挤压生产提供理论指导。【方法】物料含水率28%—60%的大豆分离蛋白(SPI)经DSE-25实验型双螺杆挤压机加工,分析挤压产品在8种不同缓冲液中(即磷酸缓冲液(P)、P+SDS(S)、P+尿素(U)、P+巯基乙醇(M)、P+S+U、P+U+M、P+M+S、P+S+U+M)的溶解度,进而分析蛋白质的化学交联情况,采用SDS-PAGE凝胶电泳分析蛋白质的分子量分布和聚合程度,通过组织化度测定和电镜扫描观察反映挤压产品的组织化质量情况。【结果】随着物料含水率增加,大豆蛋白挤压产品在P中的溶解度显著降低(P<0.05),在P+S+M和P+M+U中的溶解度显著升高(P<0.05),蛋白质分子的聚合程度降低了,挤压产品中出现纤维状和多孔状结构,组织化度增大。【结论】增加物料含水率有利于挤压产品中二硫键与氢键、二硫键与疏水作用之间协同作用的形成和蛋白质的伸展变性,大大降低了蛋白质分子的聚合程度,从而大大提高了挤压产品的组织化质量。

Leptin and peroxisome proliferator-activated receptor γ expression in colorectal adenoma

AIM： To investigate the expressions of leptin and per- oxisome proliferator-activated receptor y （PPARG） in relation to body mass index （BMI）. METHODS： We evaluated leptin and PPARG expres- sion in 30 adenomas over 1 cm in size by immunohisto- chemical staining. In addition, clinicopathologic features including BMI were assessed. RESULTS： PPARG and leptin expression showed a strong positive correlation （P = 0.035）. The average BMI of the leptin-positive group was higher than that of the leptin-negative group （25.4 ＋ 3.4 kg/m2 vs 22.6 ＋ 2.4 kg/m2, P = 0.018）, and leptin expression was sig- nificantly correlated with high BMI （P = 0.024）. Leptinexpression was more frequently observed in intermedi- ate/high grade dysplasia than in low grade dysplasia （P = 0.030）. However, PPARG expression was not cor- related with BMI and grade of dysplasia. CONCLUSION： BMI has influenced on the leptin ex- pression of colorectal adenoma. The exact mechanism underlies the strong correlation between leptin and PPARG expression needs further study.

AN ORGANIZATIONAL CULTURE FOR QUALITY THROUGH EMPOWERMENT MANAGEMENT

Total quality management (TQM) is of strategic significance in winning the required edge for manufacturers in Hong Kong to survive in the ever increasingly competitive market. Mere capitalization on the cheap availability of labour and land in the China's Mainland for competitiveness is no longer viable because of the emergence of new competitors in particular those in Asia countries. TQM aiming for continuous improvements is the key for profitability growth and long run competitiveness. Over emphasis in the “hardware” for quality improvement without the complementation of it with the cultivation of the “software” for its implementation will not only delay the real implementation of real TQM but may also result in catastrophic failure of the organization in the face of rapid changes in demand and expectations of customers. An organizational culture for quality improvement through management empowerment is believed to be fruitful in helping the Hong Kong manufacturers to win the uphill battle for their well being and even survival in the world competition.

Successful Entrepreneurs： Its Leadership Style and Actual Practices

Entrepreneurs are facing pressures related to sustainability, quality assurance, and the ability to meet client expectations. Such pressures require effective leadership to lead, change, and improve enterprise performance in order to meet the demand for current and future business. Many of the new changes that are occurring in business today are transformational. They are driven by the environment and client need. The entrepreneur may not know the exact outcome at first, because it emerges throughout the process. It requires a fundamental change in their mindset and organizational culture, and requires continual course corrections to the change process. This research was conducted to help the aspiring entrepreneurs to develop and improve their leadership style. One hundred and fifty successful Bicolano entrepreneurs were surveyed and interviewed about their actual leadership styles and practices and this was the basis for developing a leadership program for aspiring or future entrepreneurs. Transformational leadership was the leadership style fairly often use of the successful entrepreneurs and this is characterized as being optimist about future of their business, enthusiastic about what needs to be accomplished, articulate a compelling vision of the future and expresses confidence that goals will be achieved.

Effect of electroacupuncture on hepatic blood flow and lipid peroxidation in rats with sepsis

Objective To investigate protective effects of electroacupuncture on injury of lipid peroxidation-induced by liver ischemia in rats with sepsis.Methods Forty-eight male SD rats were subjected to sepsis by cecal ligation and puncture （CLP）,and were randomly divided into a sham operation group （group A）,a CLP model group （group B）,a CLP model plus electroacupuncture （EA） at Zúsānlǐ （足三里 ST 36） group （group C）,a CLP model plus electroacupuncture at a sham acupoint group （group D）,a CLP model with vagotomy group （group E） and a CLP model plus electroacupuncture group after vagotomy （group F）,with 8 rats in each group.CLP was performed after abdominal vagotomy in group E and group F.EA （2 mA,2/100 Hz） was applied at bilateral ＂Zúsānlǐ＂ （足三里 ST 36） in group C and group F,and at sham acupoints in group D,respectively,for 1 hour.The hepatic blood flow （HBF） was detected by a laser-doppler flowmetry at 6 hours after CLP.The activity of plasma alanine transarninase （ALT） was determined;contents of hepatic malondialdehyde （MDA）,activity of xanthine oxidase （XOD） and the rate of water content in the hepati tissue were assessed,respectively.Results Hepatic blood flow was （56.97±11.95） U in group C,which was significantly lower than （80.12± 19.57） U shown in group A,but higher than （42.61±10.97） U in group B,（44.53±9.23） U in group D,（30.05 ±4.46） U in group E and （30.46±6.38） U in group F （all P0.05） at 6 hours after CLP.Meanwhile,the levels of MDA,XOD,ALT and hepatic water content in group C were all significantly higher than those in group A,but lower than those in the other four groups （all P0.05）.The levels of MDA,XOD,ALT and hepatic water content in group E and group F were all significantly higher than those in group D （all P0.05）,while their hepatic blood flow were lower than that in group D （both P0.05）,and no significant differences were found in all the indices mentioned above between group E and group F （all P0.05）.Conclusion Electroacupuncture at ＂Zúsānlǐ＂ （足三里 ST 36） can improve hepatic ischemia,inhibit lipid peroxidation and alleviate hepatic edema and dysfunction in septic rats,which might be related with the completeness of vagus nerves.
