黄河三角洲盐碱地区域饲草资源丰富,非常适合发展草食动物养殖,尤其是肉兔养殖。然而,该区域肉兔产业化水平不高,肉兔屠宰及兔肉加工产业缺乏相关行业标准,限制肉兔产业升级与可持续发展。集中表现在:屠宰性能分析、胴体分割分级和肉品... 黄河三角洲盐碱地区域饲草资源丰富,非常适合发展草食动物养殖,尤其是肉兔养殖。然而,该区域肉兔产业化水平不高,肉兔屠宰及兔肉加工产业缺乏相关行业标准,限制肉兔产业升级与可持续发展。集中表现在:屠宰性能分析、胴体分割分级和肉品分析缺乏科学的操作规范,相关检测标准不完善等。本文从黄河三角洲地区肉兔产业发展实际出发,以伊拉肉兔为例,对肉兔屠宰、胴体分割与性状、肉品检测与品质分析技术进行论述,制定相关技术标准和操作规程,为肉兔产业规范化生产提供科学依据;促进产业升级和新旧动能转换,提高产业核心竞争力,实现科学与生态发展。本技术规程对盐碱地区域肉兔产业发展具有重要指导意义,有利于区域资源高效生态利用,有重要经济效益和社会效益。 展开更多

[目的]探究鲁西斗鸡屠宰性能和鸡肉营养成分。[方法]测定鲁西斗鸡屠宰性能、营养成分、主要矿物质元素、氨基酸的含量。[结果]屠宰率、全净膛率、腿肌率分别达到93.26%、73.40%和24.71%。产肉性能良好,腿肌率较高。鲁西斗鸡营养成分中,蛋白质20.50%,检测出的16种游离氨基酸187.5 g/kg,其中必需氨基酸76.0 g/kg,5种鲜味氨基酸79.2 g/kg。不饱和脂肪酸2.32%,富含亚油酸、亚麻酸、花生四烯酸、DHA和二高-y-亚麻酸。矿物质中,硒含量54.0μg/kg,铁含量5.7 mg/kg,锌含量6.4 mg/kg。[结论]鲁西斗鸡鸡肉营养丰富,适合肉用开发,在一定程度上揭示了鲁西斗鸡风味突出的种质特性。 展开更多

[Method] Taking 383 pigs from five breeds including Mashen Pig, Large White Pig, Landrace, Duroc and Shanxi White Pig as the experimental animals, polymorphisms of partial fragments in the third intron of porcine H-FABP gene were detected by PCR-SSCP method, and then the polymorphic fragments were sequenced. [ Result] Two alleles, designated as A and B, were found at the locus 346 in the third intron of porcine H-FABP gene, and the mutation was caused by a A→G substitution. [ Conclusion] A polymorphic locus was discovered in the third intron of porcine H-FABP gene in this experiment, laying a foundation for the further study on the relationship between H-FABP gene and IMF content. 展开更多

Background: With increasing media coverage of food safety incidents, such as that of clenbuterol residues in pork, food safety has become a major public health concern in China. Rapidly developing online markets attract increasing numbers of Chinese consumers to purchase food on the Internet. However, the quality and safety of food sold online are uncertain and are less reported on. Objective: This research aimed to systematically study the quality and safety of chilled pork from wet markets, supermarkets, and online markets in China. Results: The chilled pork samples from online markets were fresher than those from wet markets and supermarkets based on the surface redness(a* value). Chilled pork contained high levels of nutritional elements, especially the magnesium and phos0-phorus levels in samples from online markets. The levels of heavy metal element residues and veterinary drug residues in all chilled pork samples were within the standards limits. In addition, huge differences existed in the quality and freshness of the chilled pork samples from online markets according to principal component analysis(PCA). Conclusions: Most chilled pork sold in Chinese markets was qualified and safe. It is necessary to establish an effective online market supervision system for chilled pork. 展开更多
