为了研究超微化雷竹笋膳食纤维(dietary fiber,DF)对火腿肠品质特性的影响,将2%和4%(以100 g猪肉计)三种粒径(DF1:(177.82±6.25) μm、DF2:(19.87±1.76) μm、DF3:(8.89±0.45) μm)的膳食纤维应用于火腿肠的制作工艺中... 为了研究超微化雷竹笋膳食纤维(dietary fiber,DF)对火腿肠品质特性的影响,将2%和4%(以100 g猪肉计)三种粒径(DF1:(177.82±6.25) μm、DF2:(19.87±1.76) μm、DF3:(8.89±0.45) μm)的膳食纤维应用于火腿肠的制作工艺中。采用感官评价、质构分析、低场核磁共振等方法对新型火腿肠进行综合评价。结果表明:添加4% DF3 的火腿肠的持水力最大为90.28%±0.54%,与对照相比提高8.50%,膳食纤维能显著提高火腿肠的持水性(p<0.05);添加2% DF3 的火腿肠的硬度及咀嚼性下降,但弹性、黏聚性及凝胶强度增强;低场核磁共振中显示新型火腿肠中的水分向快迟豫(即水分结合紧密的方向,T_2时间短的方向)方向移动,结合水比例增加、自由水比例减少更有利于火腿肠储藏;添加2% DF3 的新型火腿肠的色差及感官评分与对照组不存在显著性差异,不影响产品销售。综上可知,2% DF3 是制备新型火腿肠的最佳选择。 展开更多

We conducted a preliminarily study on the effects of dietary guaiacol on growth performance of abalone, Haliotis discus hannai Ino. Seven semi-purified diets were formulated with graded levels of guaiacol (0, 5, 10, 50, 100, 500, and 1 000 mg kgl). Abalone (initial weight: 0.29 ± 0.01 g; initial shell length: 8.55 ± 0.27 mm) were fed with these diets in a re-circulated water system for 152 days. Guaiacol significantly improved the specific growth rate (SGR) (P〈0.05); excessive dietary guaiacol (1 000 mg kg1) led to significantly high mortality (P〈0.05), and lipid content in the soft body increased significantly after dietary guaiacol (P〈0.05). Activities of catalase and phenoloxidase (PO) in the viscera were significantly stimulated by dietary guaiacol (P〈0.05). Broken-line analysis based on SGR indicated that the minimum dietary guaiacol for the optimal growth of juvenile abalone is 15.43 mg ·kg^-1. 展开更多

Eight goats of 7-8 months old and an average body weight (BW) of 20 ± 5.0 kg were used in double 4 × 4 Latin square design. The treatments were the four levels of leucaena meal replacement for soybean meal in concentrates at 0%, 25%, 50% and 75% of crude protein. The results showed that roughage intake (% BW and g/kgBW^0.75) increased linearly (P 〈 0.01) with increasing levels of leucaena meal while total feed intake was not significantly different among dietary treatments. Similarly, dry matter, organic matter, neutral detergent fiber digestibility and ruminal ammonia nitrogen (NH3-N) were not significantly different among dietary treatments. However, crude protein digestibility, ruminal pH (6 hr after feeding), nitrogen (N) intake, N absorption, N retention and total volatile fatty acids increased quadratically (P 〈 0.01) with the increasing levels of leucaena meals. It could be concluded that leucaena meal could replace up to 50% of soybean meal in the diet without any negative effect on feed intake, nutrient digestibility and rumen fermentation of meat goats. 展开更多

Substitution of silkworm pupae (Bombyx mori) for fish meal in broodstock diets for snakeskin gourami (Trichogaster pectoralis) was conducted in order to evaluate the effect of silkworm pupae on feed digestibility and broodstock performance. Snakeskin gourami broodfish were fed with isocaloric diets (DE 3,000 a: 50 Kcal/kg) contained 32% crude protein. The levels of substitution were 0%, 50%, 75% and 100% of protein from fish meal (equal to 0%, 14.57%, 21.75% and 29.03% silk worm by weight). The study was assigned in CRD with 4 treatments and 3 replications. Six hundred of snakeskin gourami with five-month old and average weight of 78.67 ± 2.15 g in female and average weight of 73.00 ± 2.49 g in male were stocked in 12 cages. Fifty fishes of 25 females and 25 males were reared in each cage and fed experimental diet for five months. The result indicated that protein digestibility of test diets were significantly decrease (P 〈 0.05) according to the level of silkworm pupae in diets where as the dry matter digestibility showed no significantly different (P 〉 0.05). The growth performance and egg fecundity were significantly decreased (P 〈 0.05) according to the levels of silkworm pupae. In contrast, egg quality in term of fry number on first spawned, fingering number on first spawned were not significantly different (P 〉 0.05). The survival rate of one month nursing fish on first spawned were significantly different (P 〈 0.05). Hence, silkworm pupae could substitution for 50% of protein from fish meal (14.57% by weight) in snakeskin gourami broodstock diets without any adverse effect on egg quality. 展开更多

The current study was to investigate the effects of cysteamine (CS) on carcass characteristics, meat quality, and antioxidant status in finishing pigs. A total of 24 crossbred (PIC variety) finishing pigs (60.05±1.24 kg, 12 gilts and 12 barrows) were assigned randomly to one of the three dietary groups, with four pens/group (one gilt and one barrow per pen). Pigs were fed with a basal diet containing 0 (control), 70, or 140 mg/kg CS for 47 days. The results indicated that dietary CS supplementation increased (P〈0.05) the average daily gain and feed intake with optimal responses occurring at 70 mg/kg. Dietary supplementation of CS increased (P〈0.05) the dressing percentage and lean percentage of finishing pigs with optimal responses occurring at 140 mg/kg. The CS supplementation, however, had no effect (P〉0.05) on meat quality. Dietary CS supplementation increased (P〈0.05) total antioxidant capacity (T-AOC) and decreased malondialdehyde (MDA) with optimal responses occurring at 70 mg/kg. CS supplementation at both 70 mg/kg and 140 mg/kg doses improved (P〈0.05) the muscle RNA/DNA ratio. Collectively, the results suggest dietary supplementation of 70 mg/kg CS could significantly improve growth performance and antioxidant status without adverse effects on the gastrointestinal tracts in finishing pigs while the 140 mg/kg CS supplementation improved the carcass quality. It was a meal made from barley flour and milk. The high antioxidant Talbina was formulated from whole flour of harley and oat, milk, date palm syrup (debis) and date palm seeds. The chemical composition, organoleptic properties and antioxidant activity of high antioxidant Talbina were determined. Sensory evaluation of traditional and high antioxidant Talbina showed that the developed product Talbina was considered as good for overall acceptability of all panelists. Also, the formulated Talbina contains high values of antioxidants components and natural nutrients. The antioxidant activity of formulated Talbina containing barley or oat may be due to presence of phenolic compounds and proanthocyanidins in the barley and oat. Increasing the antioxidant activity of high antioxidant Talbina containing barley and oat may be due to the adding of dates palm seeds which contain very high values of phenolic compounds and other antioxidants components. Date palm seeds as well as barley and/or oat give high antioxidants components which protect cells from oxidative stress and help to reduce the risk of cancer and heart disease as well as natural anti-depressant. Moreover, increasing the antioxidant activity in the formulated Talbina may play a role for reducing power, radical scavenging activity and the lipid peroxidation inhibition. In conclusion, supplementation of traditional Talbina containing barley and/or oat with date palm syrup (debis) and date palm seeds can produce simple and healthy meal to provide a good source of daily dietary antioxidants and micronutrients. 展开更多

The objective of the present study was to determine the effect of different sources of dietary fibre on the oxidative stress induced by a high fat diet in laboratory rats. Thirty two laboratory rats were penned individually and divided into four groups: CONT (high fat diet), G (70 g guar gum/kg), P (70 g apple pectin/kg) and WB (155 g wheat bran/kg). After 11 or 13 days of treatment DNA damage of blood leukocytes was measured by Comet assay and lipid peroxidation was studied by determining the malondialdehyde (MDA) concentration in liver and in urine. In comparison with group CONT, the degree of DNA damage was significantly lower in group WB. In groups G and P DNA damage was also reduced but not significantly. Similar results were also obtained for the liver MDA concentration. All three studied groups showed reduced liver MDA concentrations but only group WB was significant compared to group CONT. In comparison with group CONT, the groups WB and P had significantly reduced 24-hour urine MDA excretion, hut not group G. The results of the experiment confirmed that wheat bran intake effectively reduces oxidative stress induced by a high fat diet. 展开更多

However, the peelsof these fruits are normally disposed as waste or at most used as fertilizer and feeds. The objective of the study is to characterize the peels of these fruits as functional food/ingredient. Freeze-dried fruits peels of carabao mango, soursop, calamansi and plantain banana were analyzed for proximate composition, dietary fiber and phytonutrients contents, fermentability invitro and antioxidant activity. Results showed soursop peels having significantly higher soluble (12.75 g/100 g sample) and insoluble (62.55 g/100 g sample) dietary fiber among the fruit peels studied. All peels produced significant amounts of short chain fatty acids, propionate 〉 acetate 〉 butyrate. Carabao mango peels produced the highest amount of acetate while calamansipeels, the highest propionate (215.8± 3.6 mg/100 g). Carabao mango and soursop peels have significantly greater total polyphenols, flavonoids, anthocyanidins andantioxidant activity. The study showed that fruit peels of carabao mango, soursop, calamansi and plantain banana can be potential functional food ingredients. 展开更多

Food diversification is a way to strengthen national food security, for example by reducing the dependence on wheat flour as a main raw material of various food products through the use of cassava flour. Cassava flour, a rich source of carbohydrates, can be used in the making of flakes. In this study, the Virgin coconut oil (VCO) waste flour was added in cassava flour to produce gluten-free cassava flour flakes with high dietary fiber contents. The six different formulas of flakes were used in this study with addition of 0% (control), 10%, 20%, 30%, 40% and 50% coconut waste flour, respectively. Then, the chemical and microbiological characteristics of the flakes were measured. Based on the proximate data, both flours have a good quality. The microbiological analysis shows cassava flour and coconut waste flour have good sanitation and food safety. Results showed that flakes with 80% cassava flour and 20% coconut waste flour are gluten-free and contain 2.52% water, 2.27% ash, 14.40% fat, 4.50% protein, 76.31% carbohydrate, 8.56% dietary fiber. Therefore, it can be said that cassava flour flakes can serve as gluten-free and rich dietary fiber ready-to-eat food. 展开更多
