[Method] Concentrated apple juice was used as the raw material in this experiment, apple clear juice beverage was produced through dilution, blending, color protection, sterilization and other key processes. By using orthogonal test, the best formula of the apple clear juice beverage was determined, and then the color protection effects of three color protection agents Cys, NaHSO3 and Vc on the apple clear juice beverage were compared. [ Result] The best formula of the apple clear juice beverage was composed of 0.15% citric acid, 0.20% sodium citrate, 0.06% tannic acid, 6% white sugar and 16% concentrated apple juice. Besides, there was a big difference among the three kinds of color protection agents ( Cys, NaHSO3 and Vc ) in the color protection effects on the apple clear juice beverage. Considering the quality safety of the product, 0.60% Vc was chosen as the best color protection a.clent. I- Conclusionl The research could provide theoretical references for using concentrated aDDle juice to produce aDDle clear iuice beveraae.展开更多

The growth curves of the str...Three compounds modeled on the lignite structure were chosen for experimental degradation by different fungi strains. Culture conditions and extracellular enzyme activities were optimized. The growth curves of the strains were determined to study mycelium dry weight and protein content changes. Gas chromatography and infrared spectroscopy were used to detect changes of functional groups before and after the action of the fungi on the model compounds. Possible decomposition products and degrada-tion mechanisms were proposed. The research findings show that C. Versicolor and Golden Mushroom can grow in presence of the model compounds. The optimum culture conditions were a pH of 6.0, a carbon-nitrogen ratio of five and a Tween-80 concentration of 0.1%. Newly produced substances were found by gas chromatography. Infrared analysis showed that the model compounds degraded under the action of the microorganisms.展开更多
In the study cyanobacterial strains were isolated from different sites of Hizoop rivers, Koya-Iraq and identified according to their morphological characters by using microscope, two genera which were in filamentous f...In the study cyanobacterial strains were isolated from different sites of Hizoop rivers, Koya-Iraq and identified according to their morphological characters by using microscope, two genera which were in filamentous form identified as Chroococcus sp. and Lyngbya sp.. After identification of genera their optimum growth condition studied by using the effect of temperature and pH to their dry weight. In the result, the optimum temperature and pH for both filamentous cyanobacteria were 25 ℃ and pH 7.5. Both cyanobacterial strains were extracted with ethanol, methanol and diethyl ether at various concentrations (0.2 g/mL, 0.1 g/mL, 0.005 g/mL) which exhibited the antibacterial activities against Staphylococcus aureus, E. coli and B. subtilus. Inhibition activities of the two cyanobacterial extracts were more effective at high concentration against the tested pathogens at the low concentration, especially those ofLyngbya sp. The higher inhibition zone showed with extract by ethanol.展开更多

[ Method] Single factor experiment was carried out to study the influence of temperature, initial pH, culture time, different agricultural byproduct, and nitrogen source on monascus pigment in fermentation solution. Meanwhile, orthogonal experiment was conducted to get the optimal culture medium and cultivation condition. [ Resultl The optimal gene in the pigment of monascus pigment was 200 g/L of rice, 30 g/L of sweet potato powder, 10 g/L of glucose, 15 g/L of monosodium glutamate, 0.1% of zinc sulfate, and 0.1% of magnesium sulfate. The optimal culture condition was 30 ℃ and initial pH was 6.0. Fermentation time was 72 h, but when 24-L fermentation pot was used, culture time can last to 84 h. [ Condusion] The study provided theoretical basis for the development and application of monascus strains.展开更多
