食用菌不仅营养丰富,且具有保健功能,被誉为21世纪的保健食品,在人们日常饮食中常作为汤料的主要食品.衡量菌菇汤料优劣的主要指标是它的特殊风味及色泽等感官质量.真空冷冻干燥菌菇具有色、香、味具佳,形态不变、复水快等特点,但加工... 食用菌不仅营养丰富,且具有保健功能,被誉为21世纪的保健食品,在人们日常饮食中常作为汤料的主要食品.衡量菌菇汤料优劣的主要指标是它的特殊风味及色泽等感官质量.真空冷冻干燥菌菇具有色、香、味具佳,形态不变、复水快等特点,但加工成本昂贵,优化其加工工艺,降低能耗是开发应用此项技术的关键.散放丝状物料表面积大,在冻于中有充分的水分扩散通道传热性能的优劣是控制冻于速率的关键.本文以香菇丝、杨树菇丝、竹荪丝为材料.从单位冻于能耗及感官质量优化出发,找出加热板温度、高低压循环时间周期及单位面积装料量的最佳组合参数,探讨加热方式对能耗及感观质量的影响. 展开更多

The research explored the effects of carbon, nitrogen and inorganic salt nutritional factors on Lactarius deliciosus hyphae as per solid culture. The optimal recipe of culture medium was selected by observing hypha density and computing the growth index, which is the most suitable for hypha growth. The results indicated that glucose and peptone were optimal carbon and nitrogen for Lactarius deliciosus;MgSO4, CuSO4 and VB2 promoted hypha growth; FeSO4 and CoCl2 had inhibition effects. The orthogonal test concluded the optimal recipe contained glucose of 20 g/L, peptone of 1 g/L, KH2PO4 of 0.3 g/L, MgSO4 of 0.3 g/L, VB2 of 2 mg/L, and agar of 20 g/L, with original pH value adopted. After optimization, growth index of hyphae cultured at 28 ℃ was 4 055.9. 展开更多

Using the total protein content in mycelia of oyster mushroom cultured in plate medium as the index, the spectral information in 1 000-1 799 nm region was collected to establish a quantitative prediction model for the parameters of strains through partial least squares regression combined with chemometrics. The results showed that the optimal spectral pretreatment method was the combination of Savitzky-Golay smoothing+Savitzky-Golay derivative+MSC+Mean-Centefing. Parameters of the quantitative model including RC, SEC, RP, SEP, MF, SEP /SEC were all in the reasonable regions. The correlation coefficient of the real value and predictive value of the model was 0.672 63. The prediction model had better reliability, robustness and predictive effects, so it could be used for protein content detection in mycelia. 展开更多

In the present study, agar diffusion test and field trials were carried out using a mushroom (Pleurotus ostreatus) culti- var Shouyanping as the experimental material to determine the antibacterial activity of refined pyroligneous acid prepared from almond shell against Pseudomonas tolaasfi and its effects on mycelial growth of mushroom. The results revealed that 1.25%, 2.50% and 5.00% of refined pyroligneous acid obviously inhibited the occurrence of brown blotch disease in mushroom, but also greatly promoted mushroom mycelial growth. Therefore, 1.25% and 2.50% of refined pyroligneous acid can be used in fields to prevent brown blotch disease, and 5.00% refined pyroligneous acid can be used to control the incidence of brown blotch disease when it widely occurs in fields. 展开更多

Mycelium Growth and Yielding of Black Poplar Mushroom-Agrocybe aegerita (Brig.) Sing. on Different Substrates

Mycelial growth and yield of two strains ofA. aegerita on different substrates was investigated. Mycelial growth on agar media (PDA, standard, wheat, MEA, CYM, PCA, sawdust extracts: alder and mixture of beech and birch (1:1)) and sawdust substrates (birch, beech, oak, maple, alder) was investigated. Petri dishes (Ф 9 cm) for agar media and biological tubes (18 cm long and Ф 2.5 cm) for sawdust substrates were used. Yield and morphological features were studied on birch, beech and mixture of beech and alder (1:1) sawdust substrates. The temperature of inoculation for agar media and sawdust substrates was 25 ℃. For yielding, when mycelium has completely overgrown the substrate the temperature was decreased to 15-17 ℃ to initiate primordia formation. The cultivation was enlightened 10 h/d with daylight lamps (500 Ix). One crop was harvested after five weeks. The carpophores of black poplar mushrooms were picked up in clusters. There was no statistically important difference between the mycelial growths of the investigated strains. The best growing agar media were PDA (7.3 cm), MEA (7.2 cm) and wheat (7.1 cm), both strains showed the slowest mycelium growth on CYM (5.2 cm). The mycelial growth on sawdust was the best on the beech (7.1 cm) and birch (6.8 cm) sawdust. The best substrate for cultivation ofA. aegerita was mixture of beech and alder sawdust (39.5 g/100 substrate DM). The dry yield of carpophores were the highest on beech and alder substrate (3.2 g/100 substrate DM), but dry matter content was the highest on beech sawdust (15.7%). The heaviest carpophores were harvested from birch sawdust (3.7 g); the biggest caps from beech and alder sawdust (3.3 cm). There were no statistically important differences between the mycelium growth and yielding between both investigated strains. 展开更多
