The nutritional status of Chinese residents has been greatly improved during the past 50 years.Compared with Japanese people to whom our food consumption habit is similar,the calorie nutrient intake and fat nutrient i...The nutritional status of Chinese residents has been greatly improved during the past 50 years.Compared with Japanese people to whom our food consumption habit is similar,the calorie nutrient intake and fat nutrient intake per capita of Chinese residents has exceeded the intake of the Japanese residents,but the protein nutrient intake is still lower.Among the composition of the calorie nutrient,the proportion of fat is higher,but the proportion of protein is lower,and both the animal protein and the vegetable fat are small.Therefore,we should guide the poor to the rational consumption such as soybean which contains quality protein but is a kind of inexpensive food.With the increase of population eating out,residents' nutrients awareness as well as the public service institutions knowledge of nutrition should be enhanced.展开更多

The structural char...The goal of the present work was to study the effects of acid treatment on the foaming properties of a soybean protein isolate (SPI) and its fractions, glycinin (11S) and β-conglycinin (7S). The structural characteristics, interfacial properties, foaming capacity and stability of the treated proteins were studied. Results from surface hydrophobicity and differential scanning calorimetry (DSC) showed that the acid treatment caused the complete denaturation of 11S and a partial denaturation of 7S. This protein unfolding affected their interracial properties, which led to an improvement in the foaming properties of both protein fractions and isolate. Treated 7S showed the best behavior in the rearrangement process, probably due to its smaller size and its modified structural characteristics. All treated proteins showed stronger interracial films. The foams of treated proteins were destabilized mostly due to gravitational drainage rather than Ostwald ripening.展开更多

In order to verify the centesimal composi...Flavorful meat and great economic importance, crabs and swimming crabs are appreciated throughout the Brazilian coast, where its waste is discarded by fishermen and consumers. In order to verify the centesimal composition, these animals caught in Sepetiba Bay (Rio de Janeiro, Brazil), 20 samples of Ucides cordatus, Cardisoma guanhumi, Menippe nodifrons, Callinectes danae and C. exaperatus had their edible and waste parts (shells and hepatopancreas) analyzed in the Laboratory of Bromatology of the UFRRJ. The analysis revealed that the meat of crustaceans is protein (12.68% to 25.56%) and low in fat (0.37% to 0.67%), sticking to a more demanding consumer market for thin products; the waste has already presented a protein content ranging from 15.75% to 27.64% and fat from 0.75% to 3.27%, with values of calcium (17.96% to 25.23%) and phosphorus (0.93% to 1.55%), setting a precedent for use in animal feed through future studies in area.展开更多

We evaluated the effect of cadmium (Cd) on the defense responses of the Pacific oyster Crassostrea gigas to Listonella anguillarum challenge. The activities of several important defensive enzymes, including superoxide dismutase (SOD), glutathione peroxidase (GPx), acid phosphatase (ACP), Na+, K+-ATPase in gills and hepatopancreas, and phenoloxidase-like (POL) enzyme in hemolymph were assayed. In addition, the expression levels of several genes, including heat shock protein 90 (IrtSP9~)), metallothionein (MT), and bactericidal/permeability increasing (BPI) protein were quantified by fluorescent quantitative PCR. The enzyme activities of SOD, ACP, POL, and GPx in hepatopancreas, and the expression of HSP90 were down-regulated, whereas GPx activity in the gill, Na+, K+-ATPase activities in both tissues, and MT expression was increased in Cd- exposed oysters post L. anguillarum challenge. However, BPI expression was not significantly altered by co-stress of L. anguillarum infection and cadmium exposure. Our results suggest that cadmium exposure alters the oysters' immune responses and energy metabolism following vibrio infection.展开更多
