成品槟榔作为一种地方特色咀嚼品,其硬度是评价槟榔质构特点、口感品质中最为重要的指标。为了提高成品槟榔硬度检测的准确性和重复性并确定硬度最佳范围,文章系统地研究了质构仪的不同探头以及不同测试参数对槟榔硬度测定的影响,确定... 成品槟榔作为一种地方特色咀嚼品,其硬度是评价槟榔质构特点、口感品质中最为重要的指标。为了提高成品槟榔硬度检测的准确性和重复性并确定硬度最佳范围,文章系统地研究了质构仪的不同探头以及不同测试参数对槟榔硬度测定的影响,确定最佳测试参数,并进行应用分析。研究选择成品槟榔作为样品先进行单因素实验,在P50(柱形)、ACKB(刀切)、HDP-3PB(三点弯曲)中确定最佳探头,再根据不同压缩量以及不同的测试速度和触发力进行3组单因素实验确立理想参数,最后选取35种成品槟榔进行硬度测定并进行分析。结果表明:HDP-3PB探头最适合成品槟榔硬度测定,测试模式:单次压缩,参数为测试前/中/后速度3/1/3 mm/s,触发力为20.0 g,目标模式为形变,形变率40%,样品需去除卤水切割成1 cm×2 cm小块,在此测试条件下大多数槟榔硬度在5046.26~5703.07 g。该研究初步建立基于质构仪测定成品槟榔硬度的方法并进行应用和分析,丰富了成品槟榔质构检测方法,为建立标准、规范成品槟榔硬度范围提供依据。 展开更多

Firstly, this paper analyzes the present situation and development trend of supply-side reform at home and abroad. Based on the situation of Xi’an, the author analyzes ? ve production-side reforms, such as “de-production,” “de-stocking,” “deleveraging”, “cost reduction” The author puts forward the main problems of Xi’an’s supply-side reform to promote economic growth. Finally, it puts forward the path choice of supply-side reform to promote economic growth in Xi’an. 南极磷虾糜应用于鱼糜制品的工艺及机理 被引量:6

为探究南极磷虾糜的高值化利用模式,对其应用于鱼糜制品加工的关键工艺及机理进行研究。以质构、色泽、持水性、感官风味为指标对磷虾糜添加状态、添加量和功能性辅料添加量进行研究;结合SDS-PAGE、蛋白质组分和蛋白酶活力分析工艺及机... 为探究南极磷虾糜的高值化利用模式,对其应用于鱼糜制品加工的关键工艺及机理进行研究。以质构、色泽、持水性、感官风味为指标对磷虾糜添加状态、添加量和功能性辅料添加量进行研究;结合SDS-PAGE、蛋白质组分和蛋白酶活力分析工艺及机理。分别将20~60份生/熟磷虾糜和100份鱼糜制作鱼糜制品,熟磷虾糜样品凝胶强度为527~885 g·cm,生磷虾糜样品凝胶强度小于226 g·cm或无法形成凝胶。SDS-PAGE表明,生磷虾糜使鱼糜肌球蛋白重链(200 ku)和肌动蛋白(43 ku)在加工过程中发生严重降解,尤其是40℃凝胶和93℃熟化的加热过程。蒸煮能使磷虾糜水溶性蛋白和蛋白酶受热变性,是磷虾糜应用于鱼糜制品加工的必要预处理。通过单因素试验和响应面优化,鱼糜制品色泽和感官风味在添加80份熟磷虾糜时均达理想水平,再以功能性辅料(7.91份大豆分离蛋白、5.38份马铃薯淀粉和0.46份卡拉胶)对其质构、持水性进行改良。最佳熟磷虾糜、功能性辅料添加参数下制作的鱼糜制品,其凝胶强度达(534.35±24.77)g·cm,并具有均匀、致密的微观结构。 展开更多

Using the crystal structure prediction method based on particle swarm optimization algorithm, three phases (Pnnm, C2/m and Pm-3m) for InS are predicted. The new phase Pm-3m of InS under high pressure is firstly reported in the work. The structural features and electronic structure under high pressure of InS are fully investigated. We predicted the stable ground-state structure of InS was the Pnnm phase and phase transformation of InS from Pnnm phase to Pm-3m phase is firstly found at the pressure of about 29.5 GPa. According to the calculated enthalpies of InS with four structures in the pressure range from 20 GPa to 45 GPa, we find the C2/m phase is a metastable phase. The calculated band gap value of about 2.08 eV for fnS with Pnnm structure at 0 GPa agrees well with the experimental value. Moreover, the electronic structure suggests that the C2/m and Pm-3m phase are metallic phases. 展开更多
